🧇 Mediterranean Vegetable Waffles with Lemon

Ingredients
- 150 g Pumpkin puree (cooked and pureed)
- 1 kleine Stk Onion
- 1 Stk Garlic clove
- 80 g Flour (wheat)
- 1 TL Baking powder
- 100 ml Milk
- 1 Stk (Größe M) Egg
- 1 EL Olive oil
- 1 EL (gehackt) Fresh oregano
- 1/2 Stk Lemon
- 0.5 TL Salt
- 0.5 TL Ground cumin
Instructions
- 1. Finely chop the onion and garlic.
- 2. Heat the olive oil in a pan and sauté the onions and garlic until translucent.
- 3. Remove the pan from the heat and let the mixture cool briefly.
- 4. In a large bowl, mix the pumpkin puree, the cooled onion mixture, the egg, the milk, the flour, the baking powder, the oregano, the cumin, the salt, and the lemon juice.
- 5. Preheat a waffle iron and lightly brush it with oil.
- 6. Pour the batter into the waffle iron and bake the waffles until golden brown and crispy.
- 7. Remove the waffles and serve them hot.
