🍳 Matanza Matates

Ingredients
- 800 g Waxy potatoes
- 100 g Ham
- 2 Stk Onions
- 2 EL Sweet paprika flakes
- 2 Zehen Garlic
- 4 EL Olive oil
- 1 TL Salt
- 2 EL Parsley (fresh)
Instructions
- 1. Peel the potatoes and cut them into small cubes (approx. 1 cm). Also cut the ham and onions into small cubes.
- 2. Heat the olive oil in a large, non-stick pan over medium heat. Add the onions and sauté for 5 minutes until glassy and soft.
- 3. Add the potato cubes and ham. Stir to coat everything in oil. Fry the potatoes for 15 minutes without stirring too often to allow slight browning.
- 4. Add the pressed garlic and paprika flakes. Stir for another 2 minutes until the garlic is fragrant.
- 5. Remove the pan from the heat. Sprinkle with salt and fresh parsley. Let the matatas rest for 2 minutes to set slightly.
