  1. 1. Peel the potatoes and cut them into small cubes (approx. 1 cm). Also cut the ham and onions into small cubes.
  2. 2. Heat the olive oil in a large, non-stick pan over medium heat. Add the onions and sauté for 5 minutes until glassy and soft.
  3. 3. Add the potato cubes and ham. Stir to coat everything in oil. Fry the potatoes for 15 minutes without stirring too often to allow slight browning.
  4. 4. Add the pressed garlic and paprika flakes. Stir for another 2 minutes until the garlic is fragrant.
  5. 5. Remove the pan from the heat. Sprinkle with salt and fresh parsley. Let the matatas rest for 2 minutes to set slightly.
