  1. 1. Cut off the tips of the tomatoes and dice the flesh into fine cubes. Remove the seeds before cutting to eliminate seeds.
  2. 2. Peel the shallots and dice them into very fine cubes. Place the shallots in a bowl of ice water for 5 minutes to make them crisp.
  3. 3. Mix the olive oil with the white wine vinegar, dried thyme, salt, and pepper in a small pot. Heat the mixture gently until warm (do not boil).
  4. 4. Wash the iceberg lettuce, dry the leaves thoroughly, and cut them into wide strips.
  5. 5. Dry the shallots well. Place the lettuce, shallots, and tomato cubes in a large bowl. Pour the warm oil over the ingredients and toss the salad gently until it becomes glossy.
