🧁 Moist Spanish Citrus Poppy Seed Magdalena

Ingredients
- 200 g All-purpose flour
- 150 g Sugar
- 100 g Butter (softened)
- 140 g Eggs (Size M)
- 1 Stk Lemon
- 20 g Poppy Seeds
- 10 g Baking Powder
- 80 ml Whole Milk
Instructions
- 1. Preheat the oven to 180 °C (conventional heat). Grease a Magdalena baking pan (muffin tin) with butter and dust lightly with flour.
- 2. Cut the lemon into quarters. Juice the quarters and finely grate the peel (zest), avoiding the white pith.
- 3. Beat the softened butter with the sugar in a bowl until creamy. Add the eggs one by one and mix well until the mixture is light and airy.
- 4. In another bowl, mix the flour, baking powder, poppy seeds, lemon zest, and lemon juice. Add this dry mixture alternately with the milk to the butter mixture. Stir only briefly until just combined.
- 5. Fill the dough into the prepared tin (approx. 3/4 full). Bake the dough for 20-25 minutes until a toothpick comes out clean.
- 6. Let the Magdalenas cool in the tin for approx. 5 minutes before inverting them and cooling completely on a wire rack.
