🍽️ Low-Carb Airfryer Chicken Thighs with Lemon-Herb Crust

Ingredients
- 400g Chicken Thighs
- 2 EL Lemon Juice
- 2 EL Parsley
- 1 EL Thyme
- 2 Garlic Clove
- 2 EL Olive Oil
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Pat the 400 g chicken thighs dry with paper towels. Never wash them, or they’ll splatter.
- 2. Squeeze 2 tbsp of lemon juice fresh. Fresh tastes more aromatic than from a bottle.
- 3. Wash the bunch of parsley and shake it dry. Wet herbs clump together in the marinade.
- 4. Chop the parsley finely. Coarse pieces taste stronger than a puree.
- 5. Pluck the thyme leaves from the stems. The stems are too woody to eat.
- 6. Press 2 garlic cloves through a press. This avoids large, unpleasant pieces.
- 7. Mix the lemon juice, herbs, garlic, 2 tbsp olive oil, 1 tsp salt, and pepper in a bowl. The marinade should be creamy-smooth.
- 8. Coat the chicken thighs all over with the marinade. Make sure to get every part for full flavour.
- 9. Let the chicken marinate at room temperature for 15 Min. This allows the flavour to soak deep into the meat.
- 10. Preheat the air fryer to 200 °C. This takes about 3 Min., then put the thighs in.
- 11. Place the chicken thighs in the air fryer basket. Don’t stack them, or they won’t cook evenly.
- 12. Cook the thighs for 10 Min. at 200 °C until golden brown. Open the basket and flip them once.
- 13. Fry the chicken thighs for another 10 Min. at 200 °C. The skin should now be golden brown and crispy.
- 14. Take the thighs out and let them rest for 5 Min. This keeps the juices in the meat.
- 15. Arrange the chicken thighs on plates. They’re perfect when the meat easily pulls away from the bone.
