Ingredients
- 400g Chicken Thighs
- 200g Quark
- 1 Bund Parsley
- 1 Bund Chives
- 1 Lemon
- 2 EL Olive Oil
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Preheat the air fryer to 180 °C. This takes about 3 minutes and ensures crispy skin.
- 2. Pat 400 g chicken thighs dry with paper towels. Wet skin will never get crispy.
- 3. Rub the chicken thighs with 1 tsp salt and 1 tsp pepper. Make sure to distribute evenly.
- 4. Brush the seasoned chicken thighs with 2 tbsp olive oil. This helps them brown evenly.
- 5. Place the chicken thighs in the air fryer basket. Ensure they don't touch each other.
- 6. Cook the chicken thighs at 180 °C for about 20 minutes, until golden brown. Turn them after 10 minutes for even browning.
- 7. Remove the cooked chicken thighs from the air fryer. Let them rest for 5 minutes to redistribute the juices.
- 8. Wash 1 bunch parsley under cold water. Remove any wilted leaves and dry it well.
- 9. Wash 1 bunch chives under cold water. Chop them into fine pieces.
- 10. Squeeze the juice from 1 lemon. Use a lemon press or your hands.
- 11. Put 200 g quark into a small bowl. This is the base for your sauce.
- 12. Combine the quark with the lemon juice, chopped herbs, salt and pepper. Stir until smooth.
- 13. Cut the chicken thighs into pieces if you like. This makes it easier to scoop up the quark.
- 14. Serve the chicken thighs with the herb quark. It’s perfect when the skin still crackles.
