🍽️ Low-Carb Airfryer Chicken Breast with Zucchini Noodles and Avocado-Dill Sauce

Ingredients
- 200g Chicken Breast Fillet
- 2 Zucchini
- 1 Avocado
- 1 Bund Dill
- 2 EL Olive Oil
- 1 EL Lemon Juice
- 2 Zehen Garlic
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Preheat the air fryer to 180 °C. This takes about 3 minutes.
- 2. Wash the 2 zucchini under running water. Then dry them with a kitchen towel.
- 3. Cut the zucchini into long, thin strips using a vegetable peeler. Place the noodles on a plate.
- 4. Pat the 200 g chicken breast fillet dry with paper towels. Never wash it, as this spreads germs.
- 5. Finely grate the 2 cloves of garlic. Set half aside for the sauce.
- 6. Season the chicken fillet with half of the salt and pepper. Rub the seasoning into the meat.
- 7. Place the chicken fillet in the air fryer basket. Add the remaining half of the garlic.
- 8. Cook the chicken fillet in the air fryer at 180 °C for about 15 minutes, until it is cooked through. Turn it after 7 minutes.
- 9. Fry the zucchini noodles in a pan with 1 tablespoon of olive oil for about 3 minutes while stirring. They should be al dente.
- 10. Halve the avocado, remove the pit, and scoop the pulp into a bowl.
- 11. Finely chop 1 bunch of dill. Add it to the avocado along with the remaining garlic.
- 12. Mix the avocado mixture with 1 tablespoon of lemon juice and the remaining olive oil. Season with salt.
- 13. Remove the chicken fillet from the air fryer. Let it rest for 5 minutes to redistribute the juices.
- 14. Cut the chicken fillet into bite-sized slices. The core temperature should be at least 74°C.
- 15. Place the zucchini noodles on plates and top with the chicken slices. Spoon the sauce over it.
- 16. Serve the dish immediately. It's perfect when the meat is juicy and the sauce is creamy.
