Ingredients
- 150 g Green Lentils
- 1 Carrot
- 1 Onion
- 1 Stange Celery
- 800 ml Vegetable Broth
- 1 Bay Leaf
- 1 TL Thyme
- 2 EL Olive Oil
Instructions
- 1. Dice onion, carrot, and celery.
- 2. Heat oil in a large pot and sauté the vegetables.
- 3. Add lentils and sauté briefly.
- 4. Add broth and season with bay leaf and thyme.
- 5. Cover and simmer for about 30 minutes.
- 6. Remove bay leaf and puree soup if desired.
