🍲 Onion Soup with Bacon-Wrapped Plums

Ingredients
- Vegetable onions 5 pcs
- Thyme, fresh 25 g
- Butter 1 tbsp
- Sunflower oil 2 tbsp
- Cumin 0.5 tsp
- Salt pinch
- Pepper, black ground pinch
- Vegetable broth 800 ml
- White wine, dry 200 ml
- Bacon 4 slices
- Dried prunes 100 g
Instructions
- 1. Halve the onions and remove the skin.
- 2. Cut the onions into pieces about 2 cm wide.
- 3. Wash the thyme and pat it dry.
- 4. Pluck the thyme leaves from the stems.
- 5. Heat the butter and 1 tablespoon of oil in a pot over high heat.
- 6. Add the onions to the pot.
- 7. Sauté the onions until they are translucent.
- 8. Add the thyme and caraway.
- 9. Season the mixture with salt and pepper.
- 10. Mix the vegetable broth with water if it is too concentrated.
- 11. Deglaze the onions with the broth and white wine.
- 12. Let the soup simmer for about 30 minutes on low heat.
- 13. Halve the slice of bacon.
- 14. Wrap a plum in one half of the bacon.
- 15. Thread two of the bacon-wrapped plums onto a wooden skewer.
- 16. Heat 1 tablespoon of oil in a pan over high heat.
- 17. Fry the bacon-wrapped plums for about 2 minutes until browned on all sides.
- 18. Serve the onion soup in deep plates.
- 19. Add the bacon-wrapped plums to the soup.
