🍽️ Crunchy Onion Bread with Creamy Caraway Dip

Ingredients
- yeast, fresh 25 g
- sugar 1 tsp
- water 250 ml
- spelt whole wheat flour 380 g
- whole wheat flour 150 g
- salt pinch
- onions, yellow 3 pcs
- butter 2 tbsp
- chives, fresh 0.25 bunch
- cream cheese, plain 300 g
- cumin 1 tsp
- pepper, black ground pinch
Instructions
- 1. Crumble the yeast into a small bowl.
- 2. Add the sugar and the lukewarm water.
- 3. Stir the mixture until the yeast and sugar have completely dissolved.
- 4. Take a second bowl and add both types of flour along with one teaspoon of salt.
- 5. Pour the yeast-water mixture into the flour bowl.
- 6. Knead the ingredients into a smooth dough.
- 7. Cover the bowl.
- 8. Let the dough rise in a warm place for about one hour.
- 9. Wait until the dough volume has doubled.
- 10. Cut the onions in half lengthwise.
- 11. Remove the outer skin and dice the onions into small cubes.
- 12. Heat one tablespoon of butter in a pan.
- 13. Sauté the onion cubes over medium heat for three minutes.
- 14. Remove the pan from the heat and let the onions cool down.
- 15. Sprinkle some flour on a work surface.
- 16. Take out the dough and knead it briefly.
- 17. Work the cooled onions firmly into the dough.
- 18. Shape the dough into a round loaf.
- 19. Line a baking tray with baking paper.
- 20. Place the dough on the prepared tray.
- 21. Cover the dough again.
- 22. Let it rise for another 15 minutes.
- 23. Preheat the oven to 200 degrees top and bottom heat.
- 24. Cut shallow diamond patterns into the bread surface.
- 25. Put the bread into the preheated oven.
- 26. Bake the bread for 10 minutes at 200 degrees.
- 27. Reduce the oven temperature to 180 degrees.
- 28. Bake the bread for another 25 to 30 minutes.
- 29. Take the bread out of the oven.
- 30. Place it on a kitchen rack.
- 31. Let the bread cool down completely.
- 32. Wash the chives under running water.
- 33. Dry the chives thoroughly with a cloth.
- 34. Cut the chives into fine rings.
- 35. Put cream cheese into a small bowl.
- 36. Mix the cream cheese with the chive rings.
- 37. Add caraway seeds.
- 38. Season the cream with salt and pepper to taste.
- 39. Slice the cooled bread.
- 40. Spread the caraway cream onto the bread slices.
- 41. Serve the bread immediately.
