  1. 1. Preheat the oven to 220 degrees Celsius with fan.
  2. 2. Cut the onions in half and peel off the outer skin.
  3. 3. Dice the peeled onions into very small cubes.
  4. 4. Wash the apples thoroughly under running water.
  5. 5. Peel the apples and cut them into four large quarters.
  6. 6. Remove the hard core from the apple quarters.
  7. 7. Dice the apple flesh into small cubes as well.
  8. 8. Wash the fresh thyme sprigs under cold water.
  9. 9. Gently dry the thyme sprigs with a kitchen towel.
  10. 10. Pluck the small thyme leaves off the woody stems.
  11. 11. Heat a non-stick frying pan on medium heat.
  12. 12. Place the bacon strips into the hot pan.
  13. 13. Fry the bacon for about one minute until crispy, without adding extra oil.
  14. 14. Add the diced onions and apples to the pan with the bacon.
  15. 15. Sauté the vegetables and fruits for another two minutes.
  16. 16. Get a large mixing bowl ready.
  17. 17. Add the crème fraîche to the bowl.
  18. 18. Crack the eggs and add them to the crème fraîche.
  19. 19. Season the mixture with a pinch of salt.
  20. 20. Add freshly ground pepper to taste.
  21. 21. Whisk the egg-cream ingredients well together.
  22. 22. Add the fried bacon-onion-apple mixture into the egg cream.
  23. 23. Sprinkle the fresh thyme leaves over the mixture.
  24. 24. Stir everything carefully until evenly distributed.
  25. 25. Lightly grease a round cake or baking dish with butter or oil.
  26. 26. Take the puff pastry out of the packaging.
  27. 27. Roll out the pastry on a floured surface until flat.
  28. 28. Place the rolled-out pastry carefully into the prepared dish.
  29. 29. Press the dough up at the edge to form a border about three centimeters high.
  30. 30. Pour the liquid bacon-egg filling into the pastry shell.
  31. 31. Place the dish into the preheated oven.
  32. 32. Bake the tart for about 20 to 25 minutes.
  33. 33. Remove the tart when it is golden brown and firm.
  34. 34. Let the tart cool down briefly in the oven or on the counter.
  35. 35. Cut the tart into portions and serve it warm.
