  1. 1. Bring two liters of salted water to a boil in a pot.
  2. 2. Add frozen peas and snow peas to the boiling water.
  3. 3. Cook the vegetables for about two minutes.
  4. 4. Pour the vegetables into a colander and rinse them with cold water to stop the cooking process.
  5. 5. Wash the arugula in the same colander.
  6. 6. Whisk one teaspoon of mustard and one teaspoon of sweet mustard in a bowl.
  7. 7. Add two tablespoons of balsamic vinegar and stir well.
  8. 8. Slowly add three tablespoons of olive oil and whisk the mixture.
  9. 9. Season the dressing with salt and pepper to taste.
  10. 10. Toss the drained peas, snow peas, and arugula with the dressing.
  11. 11. Spread the salad on a large platter.
  12. 12. Place slices of Serrano ham over the salad.
  13. 13. Shave Parmesan cheese finely over the salad using a vegetable peeler.
