  1. 1. Wash the zucchini thoroughly and cut off the hard ends. Grate the vegetable coarsely. Place the zucchini shreds in a sieve and sprinkle them generously with salt. Crumble the feta into small pieces using your hands. Wash the parsley, shake it dry, and pick the leaves off the stems. Chop the leaves coarsely. Wash the lemon under hot water. Grate about one teaspoon of fine zest. Cut the lemon in half and squeeze out the juice.
  2. 2. Gently squeeze the salted zucchini shreds in the sieve with your hands to let the released juice drain away. Place the drained zucchini shreds, feta, parsley, and lemon zest into a bowl. Add one egg and breadcrumbs. Mix all ingredients until you have a homogeneous mass. Season the mixture with pepper and oregano.
  3. 3. Heat four tablespoons of oil in a frying pan over high heat. Take one tablespoon of the zucchini mixture and form small, flat fritters. Place the fritters into the hot oil. Fry them for about three minutes on each side until golden brown. Place the finished fritters on kitchen paper to absorb excess oil. Fry the remaining dough as well.
  4. 4. Mix the Greek yogurt with one tablespoon of lemon juice. Season the sauce with salt and pepper. Arrange the zucchini fritters on plates. Serve them with the yogurt dip. Enjoy your meal!
