🍽️ Crispy Zucchini Patties with Spicy Tomato Sauce

Ingredients
- Bush tomatoes 6 pcs
- Onions, yellow 1 pcs
- Garlic cloves 1 pcs
- Parsley, fresh 30 g
- Zucchini 2 pcs
- feta 200 g
- Wheat flour, Type 405 200 g
- Salt pinch
- Pepper, black ground pinch
- Oil 3 tbsp
- Tomato paste 2 tbsp
- Chili, ground pinch
- Sugar pinch
- Vegetable broth 100 ml
Instructions
- 1. Score the tomatoes lightly and pour boiling water over them.
- 2. Peel off the skin from the tomatoes and chop them roughly.
- 3. Halve the onion, peel it, and dice it finely.
- 4. Peel the garlic and chop it finely.
- 5. Wash the parsley, shake it dry, and remove the thick stems.
- 6. Chop the parsley finely.
- 7. Wash the zucchini, trim the ends, and grate it coarsely.
- 8. Crumble the feta cheese into small pieces with your hands.
- 9. Add the zucchini, half of the onions, the parsley, the feta, and the flour to a bowl.
- 10. Season the mixture with salt and pepper.
- 11. Shape the zucchini mixture into patties with a diameter of about 5 cm.
- 12. Set the patties aside.
- 13. Heat 1 tablespoon of oil in a pot over high heat.
- 14. Sauté the remaining onions and garlic for about 2 minutes.
- 15. Add the tomatoes and tomato paste and cook them for about 2 minutes.
- 16. Season the sauce with chili, salt, pepper, and sugar.
- 17. Pour in the vegetable broth.
- 18. Simmer the sauce for about 10 minutes.
- 19. Heat 2 tablespoons of oil in a pan over high heat.
- 20. Fry the zucchini patties for about 3 minutes until golden brown.
- 21. Arrange the patties on plates.
- 22. Serve the patties with the tomato sauce.
