🥗 Crispy Zucchini Patties with Pasta Salad and Quark Dip

Ingredients
- Salt pinch
- Kritharaki pasta 500 g
- Zucchini 800 g
- Parsley, fresh 20 g
- Emmental grated 200 g
- Eggs 2 pcs.
- Breadcrumbs 4 tbsp
- Wheat flour, Type 405 4 tbsp
- Oat flakes, fine 5 tbsp
- Vegetable seasoning 2 tsp
- Pepper, black ground pinch
- Oil 4 tbsp
- Basil, fresh 30 g
- Cherry tomatoes 500 g
- Vinegar 2 tbsp
- Olive oil 4 tbsp
- Lemons 1 pcs.
- Quark 40 % fat in total 200 g
- Mayonnaise 4 tbsp
- Sugar pinch
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Bring two liters of salted water to a boil in a pot.
- 3. Add the Kritharaki (small Greek pasta) to the boiling water.
- 4. Cook the pasta over medium heat for ten minutes.
- 5. Drain the pasta in a colander.
- 6. Wash the zucchini thoroughly under running water.
- 7. Cut off the hard ends of the zucchini.
- 8. Grate the zucchini coarsely into a bowl.
- 9. Mix the grated zucchini with one teaspoon of salt.
- 10. Wash the parsley and pat it dry with a kitchen towel.
- 11. Pluck the parsley leaves from the stems.
- 12. Finely chop the parsley leaves.
- 13. Knead the zucchini mixture firmly with your hands.
- 14. Squeeze the liquid out of the zucchini using your hands.
- 15. Discard the squeezed liquid.
- 16. Add cheese, eggs, breadcrumbs, flour, oat flakes, and spices to the zucchini mixture.
- 17. Fold in the finely chopped parsley.
- 18. Season the mixture with salt and pepper to taste.
- 19. Shape patties about five centimeters in diameter using your hands.
- 20. Heat two tablespoons of oil in a frying pan over high heat.
- 21. Fry the patties for two minutes on each side until golden brown.
- 22. Place the pre-fried patties on a baking sheet.
- 23. Add one to two tablespoons of oil to fry the next batch.
- 24. Repeat the frying process until all patties are pre-fried.
- 25. Finish cooking the patties in the oven for ten minutes.
- 26. Wash the basil and shake off excess water.
- 27. Pluck the basil leaves from the stems.
- 28. Finely chop the basil leaves.
- 29. Wash the tomatoes.
- 30. Cut the tomatoes in half.
- 31. Add the drained pasta, basil, and tomatoes to a bowl.
- 32. Add vinegar and olive oil to the pasta.
- 33. Season the salad with salt and pepper.
- 34. Cut the lemon in half.
- 35. Squeeze the juice from the lemon.
- 36. Mix quark, mayonnaise, and sugar in a bowl.
- 37. Add two tablespoons of lemon juice to the quark mixture.
- 38. Season the quark dip with salt and pepper.
- 39. Take the finished zucchini patties out of the oven.
- 40. Divide the Kritharaki tomato salad onto the plates.
- 41. Arrange the zucchini patties on top of the salad.
- 42. Serve the patties together with the citrus quark.
