Ingredients
- Zucchini 2 pcs
- Olive oil 2 tbsp
- Sea salt pinch
- Pepper, black ground pinch
- Cherry tomatoes 2 pcs
- Pine nuts 25 g
- Olives, green 40 g
- Cream cheese, plain 100 g
- Oregano, dried pinch
Instructions
- 1. Wash the zucchini thoroughly and trim off the ends.
- 2. Slice the zucchini into long strips about 4 millimeters thick using a vegetable peeler or a grater.
- 3. Heat some olive oil in a pan over low heat.
- 4. Fry the zucchini strips in batches for about 2 minutes on each side.
- 5. Season the fried zucchini strips with salt and pepper.
- 6. Let the zucchini strips cool down.
- 7. Pour hot water over the tomatoes in a bowl.
- 8. Peel the skin off the tomatoes.
- 9. Halve the tomatoes and remove the seeds.
- 10. Dice the tomato flesh into small pieces.
- 11. Finely chop the pine nuts and the olives.
- 12. Mix the diced tomato flesh, chopped pine nuts, and olives in a bowl with cream cheese.
- 13. Season the filling with salt, pepper, and oregano.
- 14. Spread the cream cheese filling over the cooled zucchini strips.
- 15. Roll up the zucchini strips tightly.
- 16. Secure the rolls with a wooden skewer.
- 17. Serve the zucchini rolls on a board.
