  2. 2. Slice the zucchini into long strips about 4 millimeters thick using a vegetable peeler or a grater.
  3. 3. Heat some olive oil in a pan over low heat.
  4. 4. Fry the zucchini strips in batches for about 2 minutes on each side.
  5. 5. Season the fried zucchini strips with salt and pepper.
  6. 6. Let the zucchini strips cool down.
  7. 7. Pour hot water over the tomatoes in a bowl.
  8. 8. Peel the skin off the tomatoes.
  9. 9. Halve the tomatoes and remove the seeds.
  10. 10. Dice the tomato flesh into small pieces.
  11. 11. Finely chop the pine nuts and the olives.
  12. 12. Mix the diced tomato flesh, chopped pine nuts, and olives in a bowl with cream cheese.
  13. 13. Season the filling with salt, pepper, and oregano.
  14. 14. Spread the cream cheese filling over the cooled zucchini strips.
  15. 15. Roll up the zucchini strips tightly.
  16. 16. Secure the rolls with a wooden skewer.
