  1. 1. Wash the zucchini thoroughly and cut off the hard ends.
  2. 2. Grate the zucchini coarsely.
  3. 3. Place the grated zucchini thinly between two layers of kitchen paper.
  4. 4. Let the zucchini drain briefly to absorb excess moisture.
  5. 5. Wash the tomatoes and cut them into quarters.
  6. 6. Wash the lime and cut it in half.
  7. 7. Squeeze the juice out of the lime.
  8. 8. Wash the basil and mint.
  9. 9. Shake the herbs dry.
  10. 10. Pluck the leaves off the stems.
  11. 11. Finely chop half of the herbs.
  12. 12. Put 2 tablespoons of lime juice and 2 tablespoons of sugar into a saucepan.
  13. 13. Warm the mixture over medium heat for 1 to 2 minutes.
  14. 14. Stir until the sugar is completely dissolved.
  15. 15. Remove the pot from the heat.
  16. 16. Mix the tomato pieces with the lime-sugar mixture.
  17. 17. Set the pot aside to let the tomatoes cool down.
  18. 18. Preheat the oven to 50 degrees Celsius (convection).
  19. 19. Put the dried zucchini and chopped herbs into a bowl.
  20. 20. Add the eggs, flour, and baking powder.
  21. 21. Mix all ingredients thoroughly together.
  22. 22. Season the batter generously with salt and pepper.
  23. 23. Heat 2 tablespoons of oil in a frying pan over medium heat.
  24. 24. Take a tablespoon of batter and put it into the hot pan.
  25. 25. Repeat this until you have about 6 small pancakes in the pan.
  26. 26. Fry the pancakes on each side for approx. 2 minutes until golden brown.
  27. 27. Process the remaining batter in the same way.
  28. 28. You should end up with a total of 18 pancakes.
  29. 29. Place the finished pancakes on a baking sheet.
  30. 30. Put the tray in the oven to keep the pancakes warm.
  31. 31. Clean the frying pan thoroughly.
  32. 32. Slice the halloumi cheese.
  33. 33. Heat another 2 tablespoons of oil in the cleaned pan over medium heat.
  34. 34. Place the halloumi slices in the pan.
  35. 35. Fry the cheese on both sides for approx. 1 minute until golden brown.
  36. 36. Season the fried halloumi with salt and pepper.
  37. 37. Add the remaining fresh basil and mint leaves to the tomatoes.
  38. 38. Taste the tomato-mint mixture and adjust seasoning with salt and pepper.
  39. 39. Take the zucchini pancakes out of the oven.
  40. 40. Plate the pancakes.
  41. 41. Serve them together with the fried halloumi and the tomato salsa.
  42. 42. Enjoy your meal!
  43. 43. Note: Halloumi is a Cypriot cheese from brine that resembles mozzarella.
  44. 44. Due to its high pH value, it does not melt when heated.
  45. 45. This makes it ideal for grilling and frying.
