🍽️ Crispy Zucchini Pancakes with Halloumi and Fresh Mint-Tomato Dip

Ingredients
- Zucchini 3 pcs.
- Cherry tomatoes 500 g
- Organic limes 1 pcs.
- Basil, fresh 10 g
- Mint, fresh 10 g
- Sugar 2 tbsp
- Eggs 3 pcs.
- Wheat flour, Type 405 4 tbsp
- Baking powder 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Oil 8 tbsp
- Halloumi grill cheese 500 g
Instructions
- 1. Wash the zucchini thoroughly and cut off the hard ends.
- 2. Grate the zucchini coarsely.
- 3. Place the grated zucchini thinly between two layers of kitchen paper.
- 4. Let the zucchini drain briefly to absorb excess moisture.
- 5. Wash the tomatoes and cut them into quarters.
- 6. Wash the lime and cut it in half.
- 7. Squeeze the juice out of the lime.
- 8. Wash the basil and mint.
- 9. Shake the herbs dry.
- 10. Pluck the leaves off the stems.
- 11. Finely chop half of the herbs.
- 12. Put 2 tablespoons of lime juice and 2 tablespoons of sugar into a saucepan.
- 13. Warm the mixture over medium heat for 1 to 2 minutes.
- 14. Stir until the sugar is completely dissolved.
- 15. Remove the pot from the heat.
- 16. Mix the tomato pieces with the lime-sugar mixture.
- 17. Set the pot aside to let the tomatoes cool down.
- 18. Preheat the oven to 50 degrees Celsius (convection).
- 19. Put the dried zucchini and chopped herbs into a bowl.
- 20. Add the eggs, flour, and baking powder.
- 21. Mix all ingredients thoroughly together.
- 22. Season the batter generously with salt and pepper.
- 23. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 24. Take a tablespoon of batter and put it into the hot pan.
- 25. Repeat this until you have about 6 small pancakes in the pan.
- 26. Fry the pancakes on each side for approx. 2 minutes until golden brown.
- 27. Process the remaining batter in the same way.
- 28. You should end up with a total of 18 pancakes.
- 29. Place the finished pancakes on a baking sheet.
- 30. Put the tray in the oven to keep the pancakes warm.
- 31. Clean the frying pan thoroughly.
- 32. Slice the halloumi cheese.
- 33. Heat another 2 tablespoons of oil in the cleaned pan over medium heat.
- 34. Place the halloumi slices in the pan.
- 35. Fry the cheese on both sides for approx. 1 minute until golden brown.
- 36. Season the fried halloumi with salt and pepper.
- 37. Add the remaining fresh basil and mint leaves to the tomatoes.
- 38. Taste the tomato-mint mixture and adjust seasoning with salt and pepper.
- 39. Take the zucchini pancakes out of the oven.
- 40. Plate the pancakes.
- 41. Serve them together with the fried halloumi and the tomato salsa.
- 42. Enjoy your meal!
- 43. Note: Halloumi is a Cypriot cheese from brine that resembles mozzarella.
- 44. Due to its high pH value, it does not melt when heated.
- 45. This makes it ideal for grilling and frying.
