🍽️ Zucchini-Cheese Spaetzle with Homemade Fried Onions

Ingredients
- Salt 1 tbsp
- Zucchini 2 pcs
- Onions, yellow 1 pc
- Wheat flour, Type 405 2 tbsp
- Sugar 0.5 tsp
- Oil 5 tbsp
- Butter 2 tbsp
- Whipping cream 200 g
- Spätzle, fresh 500 g
- Pepper, black ground pinch
- Hard cheese, grated 150 g
- Chives, fresh 15 g
Instructions
- 1. Fill a large pot with about 4 liters of water and add salt. Bring the water to a boil.
- 2. Wash the zucchini thoroughly. Cut off the ends.
- 3. Slice the zucchini lengthwise into thin slices.
- 4. Stack 2 to 3 slices on top of each other and cut them diagonally into wide strips.
- 5. Peel the onion and slice it into thin rings.
- 6. Mix flour, sugar, and salt in a bowl.
- 7. Separate the onion rings from each other and add them to the flour mixture.
- 8. Heat 2 tablespoons of oil and 1 tablespoon of butter in a pan over medium to high heat.
- 9. Fry half of the onion rings for 3 to 4 minutes until golden brown.
- 10. Let the fried onions drain on kitchen paper.
- 11. Clean the pan.
- 12. Repeat the frying process with the remaining oil, butter, and onions until all are crispy.
- 13. Heat 2 tablespoons of oil in the same pan over medium heat.
- 14. Fry the zucchini strips for about 3 minutes.
- 15. Deglaze the zucchini with cream.
- 16. Bring the mixture to a boil.
- 17. Simmer the zucchini in the cream for about 3 minutes.
- 18. Add the spaetzle to the boiling salted water.
- 19. Cook the spaetzle for 3 to 5 minutes.
- 20. Remove the spaetzle from the water as soon as they float to the surface.
- 21. Drain the spaetzle.
- 22. Return the spaetzle to the pot.
- 23. Season the zucchini with salt and pepper.
- 24. Fold the zucchini into the spaetzle.
- 25. Mix the grated cheese into the spaetzle.
- 26. Let the spaetzle melt briefly covered.
- 27. Wash the chives.
- 28. Dry the chives.
- 29. Cut the chives into fine rings.
- 30. Plate the zucchini cheese spaetzle.
- 31. Garnish the spaetzle with the homemade fried onions and chives.
- 32. Serve the dish.
