  1. 1. Wash the zucchini thoroughly and trim off the ends.
  2. 2. Coarsely grate the zucchini into a bowl.
  3. 3. Season the grated zucchini with salt and let it rest for a short while.
  4. 4. Halve the onions and peel them.
  5. 5. Dice the onions finely.
  6. 6. Peel the sweet potatoes.
  7. 7. Cut the sweet potatoes into pieces of about 2 cm.
  8. 8. Heat 2 tablespoons of oil in a pan over high heat.
  9. 9. Sauté the diced onions for about 1 minute until crispy.
  10. 10. Remove the pan with the onions from the heat.
  11. 11. Heat 4 tablespoons of oil in another pan over medium heat.
  12. 12. Fry the sweet potato pieces for about 15 minutes until golden brown.
  13. 13. Turn the sweet potatoes occasionally while frying.
  14. 14. Wash the thyme.
  15. 15. Pluck the thyme leaves from the stems.
  16. 16. Chop the thyme leaves finely.
  17. 17. Squeeze the zucchini well to remove the excess liquid.
  18. 18. Pour off the released juice.
  19. 19. Add flour, eggs, breadcrumbs, the sautéed onions, thyme, and Parmesan to the zucchini.
  20. 20. Knead the ingredients thoroughly.
  21. 21. Season the mixture with salt and pepper.
  22. 22. Form about 12 to 16 patties from the mixture.
  23. 23. Heat 3 tablespoons of oil in the unwashed pan over medium to high heat.
  24. 24. Fry half of the patties all around for about 8 minutes until golden brown.
  25. 25. Repeat the frying process with the remaining patties.
  26. 26. Wash the chives.
  27. 27. Dry the chives.
  28. 28. Cut the chives into fine rings.
  29. 29. Mix the chives in a bowl with sour cream, mustard, and mayonnaise.
  30. 30. Season the dip to taste with salt, pepper, and possibly vinegar.
  31. 31. Season the fried sweet potatoes with salt and pepper.
  32. 32. Arrange the sweet potatoes on plates.
  33. 33. Place the zucchini patties beside them.
  34. 34. Serve the patties with the chive dip.
