🍽️ Crispy Zucchini Balls with Sweet Potatoes and Herb Dip

Ingredients
- Zucchini 3 pcs.
- salt pinch
- onions, yellow 2 pcs.
- sweet potatoes 800 g
- oil 12 tbsp
- thyme, fresh 10 g
- wheat flour, Type 405 2 tbsp
- eggs 3 pcs.
- breadcrumbs 50 g
- Parmesan, grated 80 g
- pepper, black ground pinch
- chives, fresh 20 g
- sour cream 150 g
- mustard 1 tbsp
- mayonnaise 2 tbsp
- vinegar 1 tsp
Instructions
- 1. Wash the zucchini thoroughly and trim off the ends.
- 2. Coarsely grate the zucchini into a bowl.
- 3. Season the grated zucchini with salt and let it rest for a short while.
- 4. Halve the onions and peel them.
- 5. Dice the onions finely.
- 6. Peel the sweet potatoes.
- 7. Cut the sweet potatoes into pieces of about 2 cm.
- 8. Heat 2 tablespoons of oil in a pan over high heat.
- 9. Sauté the diced onions for about 1 minute until crispy.
- 10. Remove the pan with the onions from the heat.
- 11. Heat 4 tablespoons of oil in another pan over medium heat.
- 12. Fry the sweet potato pieces for about 15 minutes until golden brown.
- 13. Turn the sweet potatoes occasionally while frying.
- 14. Wash the thyme.
- 15. Pluck the thyme leaves from the stems.
- 16. Chop the thyme leaves finely.
- 17. Squeeze the zucchini well to remove the excess liquid.
- 18. Pour off the released juice.
- 19. Add flour, eggs, breadcrumbs, the sautéed onions, thyme, and Parmesan to the zucchini.
- 20. Knead the ingredients thoroughly.
- 21. Season the mixture with salt and pepper.
- 22. Form about 12 to 16 patties from the mixture.
- 23. Heat 3 tablespoons of oil in the unwashed pan over medium to high heat.
- 24. Fry half of the patties all around for about 8 minutes until golden brown.
- 25. Repeat the frying process with the remaining patties.
- 26. Wash the chives.
- 27. Dry the chives.
- 28. Cut the chives into fine rings.
- 29. Mix the chives in a bowl with sour cream, mustard, and mayonnaise.
- 30. Season the dip to taste with salt, pepper, and possibly vinegar.
- 31. Season the fried sweet potatoes with salt and pepper.
- 32. Arrange the sweet potatoes on plates.
- 33. Place the zucchini patties beside them.
- 34. Serve the patties with the chive dip.
