🍰 Crunchy Citrus Almond Cookies

Ingredients
- Organic lemons 1 pc.
- Organic limes 1 pc.
- Oranges 1 pc.
- Sugar 90 g
- Butter 140 g
- Icing sugar 175 g
- Salt pinch
- Eggs 1 pc.
- Wheat flour, Type 405 300 g
- Almonds, whole 80 g
Instructions
- 1. Thoroughly rinse the citrus fruits under running water.
- 2. Finely grate the outer zest from each fruit.
- 3. Remove one teaspoon of the grated zest and set it aside.
- 4. Mix the remaining citrus zest with the sugar in a bowl.
- 5. Let this mixture rest covered so the flavors can infuse.
- 6. Put the butter, powdered sugar, salt, and the reserved teaspoon of citrus zest into a separate bowl.
- 7. Beat these ingredients with a hand mixer and whisk until the mixture is creamy and smooth.
- 8. Add the egg to the butter-sugar mixture and stir it in briefly.
- 9. Mix the flour with the almonds in another bowl.
- 10. Gently fold the flour mixture into the dough until no dry spots remain.
- 11. Shape the finished dough on a lightly floured surface into three equal rolls (each approx. 30 cm long).
- 12. Place the dough rolls in the refrigerator for about 30 minutes to firm up.
- 13. Preheat the oven to 180 degrees Celsius fan-forced.
- 14. Roll the cold dough logs in the previously prepared citrus-sugar mixture until fully coated.
- 15. Slice the rolls into approximately one-centimeter thick discs.
- 16. Place the cookies on baking sheets lined with parchment paper, leaving some space between them.
- 17. Bake the trays one after the other for about 12 to 14 minutes.
- 18. Remove the cookies when they are lightly golden brown.
- 19. Immediately sprinkle the warm cookies with the remaining citrus sugar.
- 20. Let the cookies cool completely before eating.
