🍰 Lemon Truffles

Ingredients
- Lemons 2 pcs
- Whipping cream 100 g
- Chocolate, white 200 g
- Butter 20 g
- Sugar 50 g
Instructions
- 1. Wash lemons thoroughly, zest about 3 tsp and combine 2 tsp with cream in a pot, bringing it to a boil. Remove the pot from the heat and let it sit covered for about 10 minutes.
- 2. Chop the chocolate finely. Strain the cream, reheat it, and then remove from heat. Melt the chocolate and butter in the cream. Chill the mixture in a bowl for about 2 hours.
- 3. If necessary, let the mixture soften slightly at room temperature. Beat it creamy with a hand mixer and whisk. Scoop small portions with 2 teaspoons and shape them into ovals. Place them on a board and chill for another 20 minutes.
- 4. In a bowl, mix the remaining lemon zest with sugar, roll the lemon truffles in it and store them airtight in a container.
