  1. 1. Wash lemons thoroughly, zest about 3 tsp and combine 2 tsp with cream in a pot, bringing it to a boil. Remove the pot from the heat and let it sit covered for about 10 minutes.
  2. 2. Chop the chocolate finely. Strain the cream, reheat it, and then remove from heat. Melt the chocolate and butter in the cream. Chill the mixture in a bowl for about 2 hours.
  3. 3. If necessary, let the mixture soften slightly at room temperature. Beat it creamy with a hand mixer and whisk. Scoop small portions with 2 teaspoons and shape them into ovals. Place them on a board and chill for another 20 minutes.
  4. 4. In a bowl, mix the remaining lemon zest with sugar, roll the lemon truffles in it and store them airtight in a container. Enjoy!
