🍰 Lemon Tart with Blueberries

Ingredients
- Eggs 4 pcs.
- Butter 80 g
- Icing sugar 30 g
- Salt pinch
- Wheat flour, Type 405 100 g
- Lemons 1 pcs.
- Milk 500 ml
- Sugar 4 tbsp
- Vanilla pudding powder 1 packet
- Blueberries, fresh 400 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius fan.
- 2. Separate the eggs.
- 3. Set aside the egg whites for another use.
- 4. Mix butter, powdered sugar, salt, three egg yolks, and flour in a bowl to form a dough.
- 5. Dust the work surface with flour.
- 6. Roll out the dough on the floured surface.
- 7. Grease the tart pan.
- 8. Line the greased tart pan with the dough.
- 9. Ensure the dough forms a border of about three centimeters high.
- 10. Prick the tart base several times with a fork.
- 11. Cover the base with baking paper.
- 12. Weigh down the baking paper with dried peas or lentils.
- 13. Bake the base in the oven for about ten minutes.
- 14. Remove the base when it is golden brown.
- 15. Wash the lemon under hot water.
- 16. Zest about one teaspoon of lemon peel.
- 17. Halve the lemon.
- 18. Squeeze the juice from the lemon.
- 19. Put six tablespoons of milk into a bowl.
- 20. Mix the milk with sugar and vanilla pudding powder.
- 21. Bring the remaining milk to a boil in a saucepan.
- 22. Stir the mixed pudding mixture into the boiling milk.
- 23. Let the mixture cook for about one minute while stirring constantly.
- 24. Reduce the heat.
- 25. Let the pudding simmer for about four minutes.
- 26. Remove the pudding from the heat when it is thick.
- 27. Allow the pudding to cool slightly.
- 28. Mix the last egg yolk with the lemon zest.
- 29. Add two tablespoons of lemon juice.
- 30. Stir the mixture into the pudding.
- 31. Spread the vanilla pudding evenly over the tart base.
- 32. Bake the tart for another ten minutes.
- 33. Wash the blueberries.
- 34. Let the blueberries drain.
- 35. Remove the lemon tart from the oven.
- 36. Let the tart cool.
- 37. Top the tart with the blueberries.
- 38. Serve the tart.
