  2. 2. Peel the zest of the lemons using a vegetable peeler until you reach the white pith.
  3. 3. Cut the lemons in half and squeeze out the juice.
  4. 4. Put water, sugar, and the lemon zest into a pot.
  5. 5. Bring the mixture to a boil.
  6. 6. Let the syrup simmer gently for about five minutes.
  7. 7. Remove the lemon zest from the pot.
  8. 8. Add the fresh lemon juice to the syrup.
  9. 9. Pour the hot lemon syrup into a bottle.
  10. 10. Wash two more lemons under hot water.
  11. 11. Slice these lemons into thin rounds.
  12. 12. Wash the mint and pluck the leaves from the stems.
  13. 13. Put ice cubes, lemon slices, and mint into a large pitcher.
  14. 14. Pour the lemon syrup into the pitcher.
  15. 15. Top up the drink with mineral water.
