🍽️ Lemongrass Minced Meat Skewers with Coconut Tomato Sauce

Ingredients
- lemongrass 4 pcs
- onions, red 1 pc
- oil 3 tbsp
- curry powder 2 tsp
- coconut milk 200 ml
- tomatoes, chopped 400 g
- salt pinch
- sugar pinch
- jasmine rice 300 g
- mint, fresh 20 g
- minced meat, mixed 600 g
- pepper, black ground pinch
Instructions
- 1. Cut the lemongrass stalks in half.
- 2. Place the lemongrass in a container of water and let it soak.
- 3. Halve the red onion and remove the outer skin.
- 4. Dice the onion into small cubes.
- 5. Heat one tablespoon of oil in a pot over medium heat.
- 6. Add the onion cubes to the hot oil.
- 7. Sauté the onions for about three minutes until they are soft and translucent.
- 8. Stir one teaspoon of curry powder into the onions.
- 9. Fry the curry briefly to release the flavors.
- 10. Deglaze the pot with coconut milk.
- 11. Add the chopped tomatoes to the sauce.
- 12. Let the sauce simmer for about 15 minutes over medium heat.
- 13. Season the sauce with salt and sugar to taste.
- 14. Keep the sauce warm until you need it.
- 15. Put the rice in a pot with about 700 milliliters of salted water.
- 16. Bring the water with the rice to a boil.
- 17. Reduce the heat to medium and cover the pot.
- 18. Let the rice cook for about 10 minutes.
- 19. Wash the mint thoroughly under running water.
- 20. Shake the mint dry.
- 21. Pluck the mint leaves from the stems.
- 22. Finely chop the mint leaves.
- 23. Put the minced meat into a bowl.
- 24. Add the chopped mint to the minced meat.
- 25. Add one teaspoon of curry powder.
- 26. Season the mixture with salt and pepper.
- 27. Mix all ingredients well together.
- 28. Take the lemongrass out of the water.
- 29. Let the lemongrass drain.
- 30. Tap the stalks lightly with the flat side of a knife.
- 31. Shape the minced meat mixture evenly around the lemongrass.
- 32. Press the meat firmly against the stalk.
- 33. Heat two tablespoons of oil in a pan over high heat.
- 34. Fry the skewers on all sides for about two minutes over high heat.
- 35. Reduce the heat on the pan.
- 36. Cover the pan with a lid.
- 37. Cook the skewers for about five minutes.
- 38. Finally, taste the coconut tomato sauce and adjust with salt, pepper, and sugar.
- 39. Place the rice on the plates.
- 40. Add the coconut tomato sauce.
- 41. Place the lemongrass minced meat skewers on the plates.
