Ingredients
- lemongrass 4 pcs.
- ginger, fresh 20 g
- cilantro, fresh 40 g
- soy sauce 4 tbsp
- zucchini 2 pcs.
- mushrooms, white 500 g
- beef mince 600 g
- salt pinch
- pepper, black ground pinch
- oil 3 tbsp
Instructions
- 1. Cut the lemongrass stalks in the middle.
- 2. Place the lemongrass pieces in a bowl of cold water and let them soak.
- 3. Peel the ginger.
- 4. Finely chop the ginger.
- 5. Wash the coriander thoroughly.
- 6. Dry the coriander with a cloth.
- 7. Remove the coarse stems from the coriander.
- 8. Roughly chop the coriander.
- 9. Add the chopped ginger, chopped coriander, and soy sauce to a bowl.
- 10. Mix the ingredients in the bowl well together.
- 11. Wash the zucchini.
- 12. Cut off the ends of the zucchini.
- 13. Slice the zucchini diagonally into rounds.
- 14. Cut the zucchini slices into strips.
- 15. Clean the mushrooms with a kitchen towel if necessary.
- 16. Quarter the mushrooms.
- 17. Take the lemongrass out of the water.
- 18. Let the lemongrass drain.
- 19. Pound the lemongrass stalks firmly with the back of a knife.
- 20. Season the minced meat in a bowl with salt and pepper.
- 21. Shape the minced meat evenly around the lemongrass stalks.

- 23. Heat 2 tablespoons of oil in a frying pan over high heat.
- 24. Fry the lemongrass minced meat skewers on all sides.
- 25. Fry the skewers for about 5 minutes until crispy.
- 26. Heat 1 tablespoon of oil in another frying pan over high heat.
- 27. Fry the zucchini strips and mushrooms for about 4 minutes.
- 28. Deglaze the vegetables with the coriander-soy sauce mixture.
- 29. Season the vegetables with the sauce.
- 30. Plate the lemongrass minced meat skewers.
- 31. Serve the skewers together with the fried vegetables.
