🍽️ Lemongrass Meat Skewers with Vegetables

Ingredients
- lemongrass 4 pcs
- ginger, fresh 10 g
- coriander, fresh 20 g
- soy sauce 4 tbsp
- zucchini 2 pcs
- mushrooms, white 500 g
- beef mince 600 g
- salt pinch
- pepper, black ground pinch
- oil 4 tbsp
Instructions
- 1. Cut the lemongrass into two halves.
- 2. Place the lemongrass halves in a bowl of cold water and let them soak.
- 3. Peel the ginger.
- 4. Finely chop the ginger.
- 5. Wash the coriander thoroughly.
- 6. Pat the coriander dry.
- 7. Remove the thick stems from the coriander.
- 8. Roughly chop the coriander leaves.
- 9. Add the chopped ginger and coriander to a bowl.
- 10. Add soy sauce to the bowl.
- 11. Mix the ginger, coriander, and soy sauce well together.
- 12. Wash the zucchini thoroughly.
- 13. Trim the ends of the zucchini.
- 14. Slice the zucchini into thin rounds.
- 15. Cut the zucchini rounds diagonally into strips.
- 16. Wipe the mushrooms with a kitchen towel if necessary.
- 17. Quarter the mushrooms.
- 18. Remove the lemongrass from the water.
- 19. Let the lemongrass drain.
- 20. Gently tap the lemongrass stalks with the back of a knife.
- 21. Take a separate bowl for the minced meat.
- 22. Season the minced meat with salt.
- 23. Season the minced meat with pepper.
- 24. Wrap the minced meat evenly around the lemongrass stalks.
- 25. Take a pan.
- 26. Add 2 tablespoons of oil to the pan.
- 27. Heat the oil over high heat.
- 28. Place the lemongrass meat skewers in the pan.
- 29. Fry the skewers for about 5 minutes until crispy on all sides.
- 30. Turn the skewers occasionally while frying.
- 31. Take a second pan.
- 32. Add 2 tablespoons of oil to the second pan.
- 33. Heat the oil in the second pan over high heat.
- 34. Add the zucchini strips to the pan.
- 35. Add the mushrooms to the pan.
- 36. Sauté the vegetables for about 4 minutes.
- 37. Deglaze the vegetables with the coriander-soy sauce.
- 38. Season the vegetables to taste.
- 39. Place the finished skewers on plates.
- 40. Add the vegetables with the soy sauce to the skewers.
- 41. Serve the dish.
