🍰 Lemon Pretzels

Ingredients
- Lemon 1 pc.
- Butter 50 g
- Water 200 ml
- Salt pinch
- Wheat flour, Type 405 150 g
- Sugar 1 tbsp
- Eggs 3 pc.
- Rapeseed oil 1 L
- Icing sugar 125 g
Instructions
- 1. Wash the lemon thoroughly with hot water, grate about 1 tsp of the zest finely, then halve it and squeeze out the juice.
- 2. In a pot, bring butter, water, and salt to a boil. Mix the flour and sugar and add everything at once to the pot while stirring. Continue stirring until a firm dough ball forms, and let it 'dry out' for about 1 minute.
- 3. Place the dough in a bowl and work in the eggs one by one until the dough shines and falls heavily from the spoon in thick ribbons. Then, stir in the lemon zest briefly.
- 4. Cut baking paper into small squares and brush with a little oil. Fill a piping bag with a large star tip and pipe the pretzels onto the oiled paper pieces.
- 5. Heat 1 liter of oil in a pot until bubbles rise when the handle of a wooden spoon is held in it. Carefully slide the pretzels from the baking paper into the oil in batches and fry them for about 3 minutes until golden yellow, turning them once.
- 6. Remove the lemon pretzels from the oil and let them drain briefly on kitchen paper. In a bowl, mix icing sugar with lemon juice to form a thick glaze and brush the warm pretzels with it. Enjoy!
