  1. 1. Wash the lemon thoroughly with hot water, grate about 1 tsp of the zest finely, then halve it and squeeze out the juice.
  2. 2. In a pot, bring butter, water, and salt to a boil. Mix the flour and sugar and add everything at once to the pot while stirring. Continue stirring until a firm dough ball forms, and let it 'dry out' for about 1 minute.
  3. 3. Place the dough in a bowl and work in the eggs one by one until the dough shines and falls heavily from the spoon in thick ribbons. Then, stir in the lemon zest briefly.
  4. 4. Cut baking paper into small squares and brush with a little oil. Fill a piping bag with a large star tip and pipe the pretzels onto the oiled paper pieces.
  5. 5. Heat 1 liter of oil in a pot until bubbles rise when the handle of a wooden spoon is held in it. Carefully slide the pretzels from the baking paper into the oil in batches and fry them for about 3 minutes until golden yellow, turning them once.
  6. 6. Remove the lemon pretzels from the oil and let them drain briefly on kitchen paper. In a bowl, mix icing sugar with lemon juice to form a thick glaze and brush the warm pretzels with it. Enjoy!
