  1. 1. Mix 150 grams of flour, 50 grams of sugar, and a pinch of salt in a bowl.
  2. 2. Cube 80 grams of cold butter and mix it into the flour mixture.
  3. 3. Add 1 egg and knead everything into a smooth dough.
  4. 4. Wrap the dough in cling film and chill it in the refrigerator for about 30 minutes.
  5. 5. Preheat the oven to 180 degrees Celsius with fan (convection).
  6. 6. Roll out the dough on a lightly floured surface.
  7. 7. Line a greased tart pan with the dough.
  8. 8. Bake the crust for about 10 minutes.
  9. 9. Reduce the oven temperature to 150 degrees Celsius.
  10. 10. Wash the lemons thoroughly and grate about 2 tablespoons of fine zest.
  11. 11. Halve the lemons and squeeze out the juice.
  12. 12. Beat 5 eggs and 100 grams of sugar with a hand mixer until creamy and the sugar has dissolved.
  13. 13. Stir in 100 grams of cream, the lemon zest, and 100 milliliters of lemon juice.
  14. 14. Pour the mixture into the pre-baked crust.
  15. 15. Finish baking the tart for about 30 minutes.
  16. 16. Let the tart cool down.
  17. 17. Serve with fresh lemon slices and powdered sugar if desired.
