🍰 Crunchy Lemon Tart

Ingredients
- flour, Type 405 150 g
- sugar 150 g
- salt pinch
- butter 80 g
- eggs 6 pcs.
- organic lemons 4 pcs.
- whipping cream 100 g
Instructions
- 1. Mix 150 grams of flour, 50 grams of sugar, and a pinch of salt in a bowl.
- 2. Cube 80 grams of cold butter and mix it into the flour mixture.
- 3. Add 1 egg and knead everything into a smooth dough.
- 4. Wrap the dough in cling film and chill it in the refrigerator for about 30 minutes.
- 5. Preheat the oven to 180 degrees Celsius with fan (convection).
- 6. Roll out the dough on a lightly floured surface.
- 7. Line a greased tart pan with the dough.
- 8. Bake the crust for about 10 minutes.
- 9. Reduce the oven temperature to 150 degrees Celsius.
- 10. Wash the lemons thoroughly and grate about 2 tablespoons of fine zest.
- 11. Halve the lemons and squeeze out the juice.
- 12. Beat 5 eggs and 100 grams of sugar with a hand mixer until creamy and the sugar has dissolved.
- 13. Stir in 100 grams of cream, the lemon zest, and 100 milliliters of lemon juice.
- 14. Pour the mixture into the pre-baked crust.
- 15. Finish baking the tart for about 30 minutes.
- 16. Let the tart cool down.
- 17. Serve with fresh lemon slices and powdered sugar if desired.
