  1. 1. Fill a pot with about 2 liters of water and add salt. Place the pot on the stove and bring the water to a boil.
  2. 2. Thoroughly wash the green asparagus under running water. Peel the lower third of the stalks. Snap or cut off the woody, tough ends.
  3. 3. Add the prepared asparagus to the boiling salted water. Cook it for about 8 minutes until it is al dente. This means it should still have a slight bite.
  4. 4. Drain the asparagus in a sieve to let the water run off. Immediately rinse it with cold water to stop the cooking process and cool it down.
  5. 5. Wash the lemon thoroughly. Finely zest about 1 teaspoon of the peel. Make sure to use only the colored skin and not the white pith underneath.
  6. 6. Cut the lemon in half. Squeeze the juice out of both halves.
  7. 7. Roughly chop the pistachios into small pieces.
  8. 8. Slice the mozzarella into thin slices.
  9. 9. Take a small bowl. Add olive oil, the freshly squeezed lemon juice, the lemon zest, the chopped pistachios, honey, salt, and pepper.
  10. 10. Mix all ingredients in the bowl well together until a homogeneous sauce is formed.
  11. 11. Place the cooled asparagus and the mozzarella slices on the plates.
  12. 12. Drizzle the lemon dressing evenly over the asparagus and the cheese. Serve the dish immediately.
