  1. 1. Thoroughly wash the organic lemons under hot water.
  2. 2. Grate about 4 to 5 tablespoons of the zest finely.
  3. 3. Peel the lemons and cut the flesh into small cubes.
  4. 4. Peel the ginger and dice it into small pieces as well.
  5. 5. Place the ginger, lemon zest, and fruit flesh into a cooking pot.
  6. 6. Mix the ingredients with the jam sugar.
  7. 7. Heat the mixture on medium heat until it boils.
  8. 8. Let the jam bubble and cook for about 4 minutes while stirring constantly.
  9. 9. Puree the cooked mixture using a hand blender or a fork.
  10. 10. Immediately fill the hot jam into jars that have been rinsed with hot water.
  11. 11. Seal the jars tightly and let them cool down.
