🍳 Fruity Yogurt with Lemon, Honey, and Apricots

Ingredients
- Apricots, fresh 600 g
- Organic Lemons 1 pc
- Almonds, whole, blanched 2 tbsp
- Raisins 40 g
- Creamy Yogurt Greek Style 500 g
- Honey 1 tbsp
- Vanilla Sugar 1 tsp
Instructions
- 1. Rinse the apricots under running water.
- 2. Cut the apricots in half and remove the pits.
- 3. Cut the apricot halves into thin wedges.
- 4. Rinse the lemon under warm water.
- 5. Grate about one teaspoon of the green lemon zest.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from the lemon halves.
- 8. Place a pan on the stove and set the heat to medium.
- 9. Toast the almonds in the dry pan for about two minutes.
- 10. Remove the almonds from the pan once they are golden brown.
- 11. Let the almonds cool down completely.
- 12. Get the raisins and the cooled almonds.
- 13. Coarsely chop the raisins and almonds together.
- 14. Take a large bowl.
- 15. Add the cut apricots to the bowl.
- 16. Add the chopped raisins and almonds to the bowl.
- 17. Add one tablespoon of lemon juice.
- 18. Mix everything in the bowl well together.
- 19. Take a cup or a small bowl for the yogurt.
- 20. Put the yogurt into the cup.
- 21. Add the grated lemon zest to the yogurt.
- 22. Add the honey to the yogurt.
- 23. Add the vanilla sugar to the yogurt.
- 24. Stir the yogurt with the ingredients well.
- 25. Take several small bowls for serving.
- 26. Distribute the yogurt onto the bowls.
- 27. Add the apricot mixture on top of the yogurt.
- 28. Serve the dish immediately.
