  2. 2. Cut the apricots in half and remove the pits.
  3. 3. Cut the apricot halves into thin wedges.
  4. 4. Rinse the lemon under warm water.
  5. 5. Grate about one teaspoon of the green lemon zest.
  6. 6. Cut the lemon in half.
  7. 7. Squeeze the juice from the lemon halves.
  8. 8. Place a pan on the stove and set the heat to medium.
  9. 9. Toast the almonds in the dry pan for about two minutes.
  10. 10. Remove the almonds from the pan once they are golden brown.
  11. 11. Let the almonds cool down completely.
  12. 12. Get the raisins and the cooled almonds.
  13. 13. Coarsely chop the raisins and almonds together.
  14. 14. Take a large bowl.
  15. 15. Add the cut apricots to the bowl.
  16. 16. Add the chopped raisins and almonds to the bowl.
  17. 17. Add one tablespoon of lemon juice.
  18. 18. Mix everything in the bowl well together.
  19. 19. Take a cup or a small bowl for the yogurt.
  20. 20. Put the yogurt into the cup.
  21. 21. Add the grated lemon zest to the yogurt.
  22. 22. Add the honey to the yogurt.
  23. 23. Add the vanilla sugar to the yogurt.
  24. 24. Stir the yogurt with the ingredients well.
  25. 25. Take several small bowls for serving.
  26. 26. Distribute the yogurt onto the bowls.
  27. 27. Add the apricot mixture on top of the yogurt.
  28. 28. Serve the dish immediately.
