  1. 1. Whisk the chia seeds, almond drink, and vanilla sugar together in a bowl.
  2. 2. Let the mixture swell in the refrigerator for about 30 minutes.
  3. 3. Wash the lemons thoroughly with hot water.
  4. 4. Finely grate about 2 tablespoons of the zest.
  5. 5. Cut the lemons in half and squeeze out the juice.
  6. 6. Add 100 milliliters of lemon juice, the lemon zest, and the sugar to a pot.
  7. 7. Heat the mixture on high until the sugar has dissolved.
  8. 8. Reduce the heat to low and let the cream simmer for about 2 minutes.
  9. 9. Whisk 80 milliliters of lemon juice and cornstarch together in a cup.
  10. 10. Pour the starch mixture into the pot while stirring.
  11. 11. Let the cream simmer gently until it becomes creamy.
  12. 12. Set the lemon cream aside and let it cool down.
  13. 13. Chop the peanuts coarsely.
  14. 14. Wash the mint and shake it dry.
  15. 15. Pluck the mint leaves from the stems.
  16. 16. Fill 4 glasses with the swollen chia mixture.
  17. 17. Distribute the cooled lemon cream over the glasses.
  18. 18. Sprinkle the pudding with the chopped peanuts.
