🍰 Lemon Chia Pudding with Chopped Peanuts

Ingredients
- Chia seeds 8 tbsp
- Almond drink 550 ml
- Vanilla sugar 2 packets
- Organic lemons 4 pcs
- Sugar 180 g
- Cornstarch 1 tbsp
- Peanuts, roasted and salted 4 tbsp
- Mint, fresh 5 g
Instructions
- 1. Whisk the chia seeds, almond drink, and vanilla sugar together in a bowl.
- 2. Let the mixture swell in the refrigerator for about 30 minutes.
- 3. Wash the lemons thoroughly with hot water.
- 4. Finely grate about 2 tablespoons of the zest.
- 5. Cut the lemons in half and squeeze out the juice.
- 6. Add 100 milliliters of lemon juice, the lemon zest, and the sugar to a pot.
- 7. Heat the mixture on high until the sugar has dissolved.
- 8. Reduce the heat to low and let the cream simmer for about 2 minutes.
- 9. Whisk 80 milliliters of lemon juice and cornstarch together in a cup.
- 10. Pour the starch mixture into the pot while stirring.
- 11. Let the cream simmer gently until it becomes creamy.
- 12. Set the lemon cream aside and let it cool down.
- 13. Chop the peanuts coarsely.
- 14. Wash the mint and shake it dry.
- 15. Pluck the mint leaves from the stems.
- 16. Fill 4 glasses with the swollen chia mixture.
- 17. Distribute the cooled lemon cream over the glasses.
- 18. Sprinkle the pudding with the chopped peanuts.
- 19. Garnish the glasses with the mint leaves.
- 20. Serve the pudding and enjoy it.
