🍰 Crunchy Cinnamon Stars

Ingredients
- whole hazelnut kernels 500 g
- eggs 4 pcs.
- powdered sugar 350 g
- cinnamon 1 tsp
- salt pinch
- wheat flour, Type 405 4 tbsp
Instructions
- 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 2. Put the hazelnuts into the mixing bowl.
- 3. Crush the nuts for 15 seconds on speed 8.
- 4. Remove the ground nuts and set them aside.
- 5. Change the attachment in the mixing bowl to the whisk.
- 6. Separate the eggs and use only the egg whites.
- 7. Whip the egg whites with the powdered sugar for 3 minutes on speed 4 until stiff.
- 8. Take out about 10 tablespoons of the egg white mixture and save it for the glaze.
- 9. Put the ground hazelnuts, cinnamon, and a pinch of salt into a bowl.
- 10. Gently fold the remaining egg white mixture into the nut mixture.
- 11. Knead everything into a firm dough.
- 12. Roll out the dough on a floured surface to about 1 cm thickness.
- 13. Cut stars out of the dough.
- 14. Place the stars on baking sheets lined with baking paper.
- 15. Brush the stars thickly with the saved egg white.
- 16. Bake the stars for approx. 12 minutes in the oven.
- 17. Remove the cinnamon stars from the oven as soon as the glaze is set.
- 18. Let the stars cool down completely.
- 19. Store the finished stars in an airtight container.
