  1. 1. Preheat the oven to 175 degrees Celsius with top and bottom heat.
  2. 2. Put the hazelnuts into the mixing bowl.
  3. 3. Crush the nuts for 15 seconds on speed 8.
  4. 4. Remove the ground nuts and set them aside.
  5. 5. Change the attachment in the mixing bowl to the whisk.
  6. 6. Separate the eggs and use only the egg whites.
  7. 7. Whip the egg whites with the powdered sugar for 3 minutes on speed 4 until stiff.
  8. 8. Take out about 10 tablespoons of the egg white mixture and save it for the glaze.
  9. 9. Put the ground hazelnuts, cinnamon, and a pinch of salt into a bowl.
  10. 10. Gently fold the remaining egg white mixture into the nut mixture.
  11. 11. Knead everything into a firm dough.
  12. 12. Roll out the dough on a floured surface to about 1 cm thickness.
  13. 13. Cut stars out of the dough.
  14. 14. Place the stars on baking sheets lined with baking paper.
  15. 15. Brush the stars thickly with the saved egg white.
  16. 16. Bake the stars for approx. 12 minutes in the oven.
  17. 17. Remove the cinnamon stars from the oven as soon as the glaze is set.
  18. 18. Let the stars cool down completely.
  19. 19. Store the finished stars in an airtight container.
