  1. 1. Crack three eggs.
  2. 2. Separate the yolk from one egg and save it for another use.
  3. 3. Place the remaining egg white in a bowl.
  4. 4. Whisk the egg white with 250 g of powdered sugar until foamy for about 3 to 4 minutes.
  5. 5. Take a separate bowl.
  6. 6. Mix the almonds, cinnamon, sal ammoniac, and honey in it.
  7. 7. Gently fold the whipped egg white into the dry mixture.
  8. 8. Knead everything into a homogeneous dough.
  9. 9. Dust a work surface with flour.
  10. 10. Roll out the dough there to a thickness of about 1 cm.
  11. 11. Cut stars out of the dough.
  12. 12. Place the stars on a baking sheet lined with baking paper.
  13. 13. Separate the remaining egg.
  14. 14. Whisk the egg white with 100 g of powdered sugar.
  15. 15. Continue whisking until a thick glaze forms.
  16. 16. Brush the stars generously with this glaze.
  17. 17. Preheat the oven to 150 °C.
  18. 18. Bake the stars in the oven for about 12 minutes.
  19. 19. Remove the cookies as soon as the glaze is set.
