🍰 Fluffy Cinnamon Rolls with Lemon Glaze

Ingredients
- Milk 300 ml
- Yeast, fresh 0.5 pc.
- Sugar 110 g
- butter 150 g
- Wheat flour, Type 405 600 g
- Eggs 2 pc.
- Salt pinch
- Vanilla sugar 1 packet
- Cinnamon 1 tsp.
- Lemons 1 pc.
- Powdered sugar 100 g
Instructions
- 1. Put milk, yeast, and one tablespoon of sugar into the mixing container.
- 2. Heat the mixture at 37 degrees Celsius for 4 minutes on level 1.
- 3. Add 100 grams of cut butter, flour, 50 grams of sugar, eggs, a pinch of salt, and vanilla sugar.
- 4. Knead the dough for 2 minutes on the dough kneading setting.
- 5. Transfer the dough into a bowl and cover it.
- 6. Let the dough rest in a warm place for about 1 hour until it has doubled in size.
- 7. Melt 50 grams of butter and cinnamon in the mixing container for 4 minutes on level 1 at 70 degrees Celsius.
- 8. Divide the dough into two halves.
- 9. Roll each half on a floured work surface into a rectangle about 5 millimeters thick.
- 10. Brush the dough with the cinnamon butter and sprinkle sugar over it.
- 11. Roll the dough up starting from the long side.
- 12. Cut the dough into pieces about 3 centimeters thick.
- 13. Place the pieces on two baking sheets lined with baking paper.
- 14. Let the rolls rise again, covered, for about 30 minutes.
- 15. Preheat the oven to 200 degrees Celsius (top/bottom heat).
- 16. Bake the cinnamon rolls for about 25 to 30 minutes until golden brown.
- 17. Halve a lemon and squeeze out the juice.
- 18. Whisk powdered sugar with 2 tablespoons of lemon juice in a bowl to make a thick glaze.
- 19. Take the cinnamon rolls out of the oven and brush them with the glaze.
- 20. Serve the rolls best while warm.
