  1. 1. Bring about 500 milliliters of water to a boil in a pot.
  2. 2. Chop the chocolate into small pieces.
  3. 3. Place a bowl with the chocolate over the hot pot, but do not let it touch the water.
  4. 4. Let the chocolate melt slowly in the hot steam.
  5. 5. Remove the bowl from the pot and let the chocolate cool down briefly.
  6. 6. Separate the eggs. Carefully lift the yolk away from the white.
  7. 7. Whip the egg white in a clean bowl using a hand mixer and whisk until stiff.
  8. 8. Whip the cream in a separate bowl until stiff as well.
  9. 9. Place the egg yolks into a third bowl.
  10. 10. Sift powdered sugar and cinnamon over the egg yolks.
  11. 11. Whip the mixture until it is creamy and light.
  12. 12. Slowly stir the cooled, melted chocolate into the egg yolk mixture.
  13. 13. Mix the ingredients well together.
  14. 14. Fold in half of the whipped cream into the chocolate mixture.
  15. 15. Add the remaining part of the cream.
  16. 16. Add the stiffly whipped egg white.
  17. 17. Gently fold everything together with a whisk to keep the mixture airy.
  18. 18. Fill the mousse into glasses or small bowls.
  19. 19. Cover the containers.
  20. 20. Place the mousse in the refrigerator for at least one hour.
  21. 21. Cut the lemon in half.
  22. 22. Squeeze the juice from the lemon halves.
  23. 23. Put rum, honey, and lemon juice into a bowl.
  24. 24. Mix the ingredients for the dressing well.
  25. 25. Season the dressing to taste.
  26. 26. Wash the pears thoroughly.
  27. 27. Quarter the pears.
  28. 28. Remove the core from the pears.
  29. 29. Slice the pears into thin, crosswise slices.
  30. 30. Add the pear slices to the bowl with the dressing.
  31. 31. Toss the pears well with the dressing.
  32. 32. Serve the pear salad together with the chilled cinnamon chocolate mousse.
