🍰 Cinnamon Chocolate Mousse with Boozy Pear Salad

Ingredients
- Dark chocolate 150 g
- Eggs 2 pcs
- Whipping cream 200 g
- Powdered sugar 90 g
- Cinnamon 1 tsp
- Lemons 1 pcs
- Brown rum 2 tbsp
- Honey 2 tsp
- Pears 600 g
Instructions
- 1. Bring about 500 milliliters of water to a boil in a pot.
- 2. Chop the chocolate into small pieces.
- 3. Place a bowl with the chocolate over the hot pot, but do not let it touch the water.
- 4. Let the chocolate melt slowly in the hot steam.
- 5. Remove the bowl from the pot and let the chocolate cool down briefly.
- 6. Separate the eggs. Carefully lift the yolk away from the white.
- 7. Whip the egg white in a clean bowl using a hand mixer and whisk until stiff.
- 8. Whip the cream in a separate bowl until stiff as well.
- 9. Place the egg yolks into a third bowl.
- 10. Sift powdered sugar and cinnamon over the egg yolks.
- 11. Whip the mixture until it is creamy and light.
- 12. Slowly stir the cooled, melted chocolate into the egg yolk mixture.
- 13. Mix the ingredients well together.
- 14. Fold in half of the whipped cream into the chocolate mixture.
- 15. Add the remaining part of the cream.
- 16. Add the stiffly whipped egg white.
- 17. Gently fold everything together with a whisk to keep the mixture airy.
- 18. Fill the mousse into glasses or small bowls.
- 19. Cover the containers.
- 20. Place the mousse in the refrigerator for at least one hour.
- 21. Cut the lemon in half.
- 22. Squeeze the juice from the lemon halves.
- 23. Put rum, honey, and lemon juice into a bowl.
- 24. Mix the ingredients for the dressing well.
- 25. Season the dressing to taste.
- 26. Wash the pears thoroughly.
- 27. Quarter the pears.
- 28. Remove the core from the pears.
- 29. Slice the pears into thin, crosswise slices.
- 30. Add the pear slices to the bowl with the dressing.
- 31. Toss the pears well with the dressing.
- 32. Serve the pear salad together with the chilled cinnamon chocolate mousse.
