  1. 1. Peel the apples and cut them in half.
  2. 2. Remove the core and cut the flesh into small cubes.
  3. 3. Place the apple cubes in a pot with cinnamon, sugar, and apple juice.
  4. 4. Bring the mixture to a boil and simmer for about 4 to 5 minutes until the apples are soft.
  5. 5. Smoothly mix cornstarch with a little cold water in a small bowl.
  6. 6. Pour the starch-water mixture into the pot and stir to thicken the apple filling.
  7. 7. Let the apple mixture cool down completely in the bowl.
  8. 8. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  9. 9. Roll out the puff pastry on a lightly floured surface to a size of about 30 by 40 centimeters.
  10. 10. Cut the dough in half lengthwise.
  11. 11. Cut each half into four equal rectangles (each approx. 10 by 15 centimeters).
  12. 12. Distribute the cooled apple mixture evenly over one half of each dough rectangle.
  13. 13. Make several parallel cuts into the empty dough side, but do not cut all the way to the edge.
  14. 14. Fold the cut dough side over the apple mixture.
  15. 15. Press the edges of the pockets firmly together to seal them well.
  16. 16. Place the finished pockets on a baking sheet lined with baking paper.
  17. 17. Brush the surface of the pockets with cream.
  18. 18. Bake the pockets in the preheated oven for about 20 minutes until golden brown.
  19. 19. Serve the cinnamon apple pockets warm or cooled.
