🍰 Crispy Cinnamon Apple Pockets

Ingredients
- Apples, red 500 g
- Cinnamon 0.5 tsp
- Brown sugar 30 g
- Apple juice 60 ml
- Cornstarch 1 tsp
- Puff pastry 400 g
- Wheat flour, Type 405 3 tbsp
- Whipping cream 1 tbsp
Instructions
- 1. Peel the apples and cut them in half.
- 2. Remove the core and cut the flesh into small cubes.
- 3. Place the apple cubes in a pot with cinnamon, sugar, and apple juice.
- 4. Bring the mixture to a boil and simmer for about 4 to 5 minutes until the apples are soft.
- 5. Smoothly mix cornstarch with a little cold water in a small bowl.
- 6. Pour the starch-water mixture into the pot and stir to thicken the apple filling.
- 7. Let the apple mixture cool down completely in the bowl.
- 8. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 9. Roll out the puff pastry on a lightly floured surface to a size of about 30 by 40 centimeters.
- 10. Cut the dough in half lengthwise.
- 11. Cut each half into four equal rectangles (each approx. 10 by 15 centimeters).
- 12. Distribute the cooled apple mixture evenly over one half of each dough rectangle.
- 13. Make several parallel cuts into the empty dough side, but do not cut all the way to the edge.
- 14. Fold the cut dough side over the apple mixture.
- 15. Press the edges of the pockets firmly together to seal them well.
- 16. Place the finished pockets on a baking sheet lined with baking paper.
- 17. Brush the surface of the pockets with cream.
- 18. Bake the pockets in the preheated oven for about 20 minutes until golden brown.
- 19. Serve the cinnamon apple pockets warm or cooled.
