  1. 1. Put 50 grams of sugar and some water into a pot.
  2. 2. Bring the mixture to a boil over high heat.
  3. 3. Let the syrup reduce for about 5 minutes until it thickens.
  4. 4. Bring about 2 liters of water to a boil in a separate pot.
  5. 5. Separate the eggs and place the egg yolks in a metal bowl.
  6. 6. Whisk the egg yolks lightly with a whisk.
  7. 7. Place the metal bowl over the pot with the boiling water.
  8. 8. Pour the prepared sugar syrup into the eggs.
  9. 9. Whisk the mixture for about 4 minutes until it becomes thick.
  10. 10. Remove the bowl from the water bath.
  11. 11. Continue whisking until the mixture cools down to room temperature.
  12. 12. Mix quark and fresh goat cheese in a bowl with vanilla sugar.
  13. 13. Fold in the whipped egg yolks gradually into the cheese mixture.
  14. 14. Gently fold the cream into the mixture.
  15. 15. Line small molds or a loaf pan with cling film.
  16. 16. Fill the mixture into the prepared molds.
  17. 17. Let the parfait freeze for at least 4 hours in the freezer.
  18. 18. Wash the apples, quarter them, and remove the core.
  19. 19. Cut the apple pieces into small cubes.
  20. 20. Caramelize the remaining sugar over medium heat for about 3 minutes until golden brown.
  21. 21. Add the apple cubes to the pan.
  22. 22. Deglaze with apple juice.
  23. 23. Let the apple ragout simmer for about 5 minutes.
  24. 24. Season the ragout to taste.
  25. 25. Roast the sunflower seeds in a pan without fat over high heat for about 2 minutes until golden brown.
  26. 26. Wash the mint and shake it dry.
  27. 27. Pluck the mint leaves from the stems.
  28. 28. Chop the mint leaves coarsely.
  29. 29. Cut the frozen parfait into portions.
  30. 30. Serve the parfait with the apple ragout, sunflower seeds, and mint.
