🍰 Goat Cheese Parfait with Caramelized Apples

Ingredients
- water 50 ml
- sugar 75 g
- eggs 3 pcs
- quark 40% fat in total 100 g
- fresh goat cheese 100 g
- vanilla sugar 15 g
- whipping cream 200 ml
- apples, red 4 pcs
- apple juice 50 ml
- sunflower seeds 50 g
- mint, fresh 10 g
Instructions
- 1. Put 50 grams of sugar and some water into a pot.
- 2. Bring the mixture to a boil over high heat.
- 3. Let the syrup reduce for about 5 minutes until it thickens.
- 4. Bring about 2 liters of water to a boil in a separate pot.
- 5. Separate the eggs and place the egg yolks in a metal bowl.
- 6. Whisk the egg yolks lightly with a whisk.
- 7. Place the metal bowl over the pot with the boiling water.
- 8. Pour the prepared sugar syrup into the eggs.
- 9. Whisk the mixture for about 4 minutes until it becomes thick.
- 10. Remove the bowl from the water bath.
- 11. Continue whisking until the mixture cools down to room temperature.
- 12. Mix quark and fresh goat cheese in a bowl with vanilla sugar.
- 13. Fold in the whipped egg yolks gradually into the cheese mixture.
- 14. Gently fold the cream into the mixture.
- 15. Line small molds or a loaf pan with cling film.
- 16. Fill the mixture into the prepared molds.
- 17. Let the parfait freeze for at least 4 hours in the freezer.
- 18. Wash the apples, quarter them, and remove the core.
- 19. Cut the apple pieces into small cubes.
- 20. Caramelize the remaining sugar over medium heat for about 3 minutes until golden brown.
- 21. Add the apple cubes to the pan.
- 22. Deglaze with apple juice.
- 23. Let the apple ragout simmer for about 5 minutes.
- 24. Season the ragout to taste.
- 25. Roast the sunflower seeds in a pan without fat over high heat for about 2 minutes until golden brown.
- 26. Wash the mint and shake it dry.
- 27. Pluck the mint leaves from the stems.
- 28. Chop the mint leaves coarsely.
- 29. Cut the frozen parfait into portions.
- 30. Serve the parfait with the apple ragout, sunflower seeds, and mint.
