  1. 1. Ideally, let the berries thaw overnight in the refrigerator.
  2. 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  3. 3. Roll out the puff pastry flat.
  4. 4. Slice the goat cheese into rounds about 2 centimeters thick.
  5. 5. Wash the thyme and shake it dry.
  6. 6. Pluck the leaves off the stems.
  7. 7. Use a glass to cut out circles about 6 centimeters in diameter from the dough.
  8. 8. Place the dough circles on a baking sheet lined with baking paper.
  9. 9. Place a slice of goat cheese in the center of each circle.
  10. 10. Add one tablespoon of berries on top of the cheese.
  11. 11. Drizzle a little honey over it.
  12. 12. Sprinkle a few thyme leaves over it.
  13. 13. Fold the edge inward at small intervals to create a wavy shape.
  14. 14. Bake the tartlets in the oven for about 15 minutes.
  15. 15. Let them cool down for a short while.
  16. 16. Then serve them.
