🍽️ Giant Flammkuchen Spirals

Ingredients
- yeast, fresh 10 g
- sugar 1 tbsp
- water 450 ml
- wheat flour, type 405 900 g
- salt 2.5 tsp
- olive oil 10 tbsp
- sour cream 400 g
- pepper, black ground 0.5 tsp
- onions, red 2 pcs
- grapes, dark 100 g
- tomatoes, dried 150 g
- chives, fresh 0.5 bunch
Instructions
- 1. Mix the yeast with the sugar and the water.
- 2. Add the flour, two teaspoons of salt, and six tablespoons of olive oil to the dough.
- 3. Knead the dough for about ten minutes until it is smooth and elastic.
- 4. Shape the dough into a ball.
- 5. Lightly brush the ball with a little olive oil.
- 6. Let the dough rise covered for about an hour until it has doubled in size.
- 7. Prepare the filling in the meantime.
- 8. Grease two baking pans with four tablespoons of olive oil.
- 9. Divide the yeast dough into two equal halves.
- 10. Roll out the first half of the dough into a long rectangle.
- 11. Spread half of the sour cream over the dough.
- 12. Distribute half of the onion rings, grapes, dried tomatoes, and chives on top.
- 13. Cut the dough sheet into strips about five centimeters wide.
- 14. Roll up the first strip tightly.
- 15. Place the roll in the center of the baking pan.
- 16. Wrap the remaining dough strips spirally around the center.
- 17. Repeat steps ten to sixteen for the second spiral.
- 18. Place the first baking pan in the cold oven.
- 19. Then preheat the oven to 170 degrees Celsius with top and bottom heat.
- 20. Bake the first spiral for 35 to 40 minutes until it is golden brown.
- 21. Cover the second spiral.
- 22. Bake the second spiral in the preheated oven for 35 to 40 minutes.
- 23. Serve the spirals while still warm.
