  3. 3. Pat the meat completely dry with a kitchen towel.
  4. 4. Place the tenderloin in a baking dish.
  5. 5. Rub the meat evenly with the BBQ seasoning.
  6. 6. Set the dish aside to let the meat marinate.
  7. 7. Wash the potatoes thoroughly.
  8. 8. Peel the potatoes.
  9. 9. Cut the potatoes into cubes of about 1 cm.
  10. 10. Put the potato cubes into a pot with salted water.
  11. 11. Bring the water to a boil.
  12. 12. Cook the potatoes for about 6 minutes.
  13. 13. Drain the potatoes in a colander.
  14. 14. Let the potatoes drain well.
  15. 15. Peel the kohlrabi.
  16. 16. Remove any woody parts from the kohlrabi.
  17. 17. Cut the kohlrabi into pieces of about 1 cm.
  18. 18. Heat 2 tablespoons of oil in a pan over high heat.
  19. 19. Sear the pork tenderloin on all sides for about 3 minutes until golden brown.
  20. 20. Place the seared meat back into the baking dish.
  21. 21. Finish cooking the meat in the oven for about 15 minutes.
  22. 22. Heat 1 tablespoon of oil in a pot over high heat.
  23. 23. Fry the kohlrabi cubes for about 2 minutes over high heat.
  24. 24. Deglaze the kohlrabi with 100 ml of water.
  25. 25. Stir the crème fraîche into the kohlrabi.
  26. 26. Reduce the heat.
  27. 27. Simmer the mixture for about 10 minutes.
  28. 28. Season the kohlrabi with salt, pepper, and sugar.
  29. 29. Heat 2 tablespoons of oil in the pan over high heat.
  30. 30. Fry the drained potato cubes for about 5 minutes on all sides until golden brown.
  31. 31. Season the potatoes with salt and pepper.
  32. 32. Take the meat out of the oven.
  33. 33. Wrap the meat in aluminum foil.
  34. 34. Let the meat rest for about 5 minutes.
  35. 35. Wash the chives.
  36. 36. Dry the chives thoroughly.
  37. 37. Cut the chives into fine rings.
  38. 38. Add the chive rings to the kohlrabi dish.
  39. 39. Slice the pork tenderloin diagonally.
  40. 40. Plate the meat slices, fried potato cubes, and kohlrabi.
  41. 41. Serve the dish.
