🍽️ Flavorful Pork Tenderloin with Kohlrabi and Crispy Potato Cubes

Ingredients
- Pork fillet 600 g
- BBQ spice mix 2 tsp
- Potatoes, mostly waxy 1 g
- Salt pinch
- Kohlrabi 3 pcs
- Oil 5 tbsp
- Crème fraîche 200 g
- Pepper, black ground pinch
- Sugar pinch
- Chives, fresh 10 g
Instructions
- 1. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 2. Rinse the pork tenderloin under running water.
- 3. Pat the meat completely dry with a kitchen towel.
- 4. Place the tenderloin in a baking dish.
- 5. Rub the meat evenly with the BBQ seasoning.
- 6. Set the dish aside to let the meat marinate.
- 7. Wash the potatoes thoroughly.
- 8. Peel the potatoes.
- 9. Cut the potatoes into cubes of about 1 cm.
- 10. Put the potato cubes into a pot with salted water.
- 11. Bring the water to a boil.
- 12. Cook the potatoes for about 6 minutes.
- 13. Drain the potatoes in a colander.
- 14. Let the potatoes drain well.
- 15. Peel the kohlrabi.
- 16. Remove any woody parts from the kohlrabi.
- 17. Cut the kohlrabi into pieces of about 1 cm.
- 18. Heat 2 tablespoons of oil in a pan over high heat.
- 19. Sear the pork tenderloin on all sides for about 3 minutes until golden brown.
- 20. Place the seared meat back into the baking dish.
- 21. Finish cooking the meat in the oven for about 15 minutes.
- 22. Heat 1 tablespoon of oil in a pot over high heat.
- 23. Fry the kohlrabi cubes for about 2 minutes over high heat.
- 24. Deglaze the kohlrabi with 100 ml of water.
- 25. Stir the crème fraîche into the kohlrabi.
- 26. Reduce the heat.
- 27. Simmer the mixture for about 10 minutes.
- 28. Season the kohlrabi with salt, pepper, and sugar.
- 29. Heat 2 tablespoons of oil in the pan over high heat.
- 30. Fry the drained potato cubes for about 5 minutes on all sides until golden brown.
- 31. Season the potatoes with salt and pepper.
- 32. Take the meat out of the oven.
- 33. Wrap the meat in aluminum foil.
- 34. Let the meat rest for about 5 minutes.
- 35. Wash the chives.
- 36. Dry the chives thoroughly.
- 37. Cut the chives into fine rings.
- 38. Add the chive rings to the kohlrabi dish.
- 39. Slice the pork tenderloin diagonally.
- 40. Plate the meat slices, fried potato cubes, and kohlrabi.
- 41. Serve the dish.
