🥗 Aromatic Chicken with Fresh Tabouleh

Ingredients
- chicken breast fillets 600 g
- lemons 1 pc.
- curry powder 2 tsp
- cinnamon 0.25 tsp
- salt pinch
- pepper, black ground pinch
- oil 3 tbsp
- couscous 100 g
- cherry tomatoes 500 g
- spring onions 2 pc.
- parsley, fresh 2 bunch
- mint, fresh 40 g
- pomegranate 0.5 pc.
- olive oil 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Wash the chicken thoroughly and pat it dry with a kitchen towel.
- 3. Cut the lemon in half and squeeze out the juice.
- 4. In a bowl, mix curry powder, cinnamon, salt, and pepper with one tablespoon of lemon juice and one tablespoon of oil.
- 5. Place the chicken in the spice mixture and coat it thoroughly.
- 6. Heat two tablespoons of oil in a frying pan over medium heat.
- 7. Fry the chicken for about five minutes, turning it until all sides are golden brown.
- 8. Wrap the chicken in aluminum foil.
- 9. Place it in the oven for about ten minutes to finish cooking.
- 10. Bring water to a boil in a pot or kettle.
- 11. Put the couscous into a bowl.
- 12. Pour 200 milliliters of boiling water over the couscous.
- 13. Cover the bowl and let the couscous swell for about ten minutes.
- 14. Wash the tomatoes and cut them into quarters.
- 15. Clean the spring onions and remove the root ends.
- 16. Slice the spring onions into thin rings.
- 17. Wash the parsley and mint and shake off excess water.
- 18. Remove the thick stems from the herbs.
- 19. Cut the herbs into fine strips.
- 20. Cut the pomegranate in half and tap the seeds out of the skin with a spoon.
- 21. Fluff up the couscous with a fork.
- 22. Fold in the tomatoes with their juice and the spring onions into the couscous.
- 23. Drizzle the salad with olive oil.
- 24. Add the chopped herbs.
- 25. Season to taste with lemon juice, salt, and pepper.
- 26. Take the chicken out of the oven.
- 27. Slice the chicken.
- 28. Plate the chicken with the tabouleh salad.
- 29. Serve the dish and enjoy your meal.
