🍽️ Spicy Mole Wraps with Tender Goulash

Ingredients
- Spring onions 1 bunch
- Garlic cloves 2 pcs
- Pork ham goulash 600 g
- Oil 2 tbsp
- Salt pinch
- Cinnamon 0.5 tsp
- Chili, ground 0.5 tsp
- Tomatoes, chopped 400 g
- Poultry broth 400 ml
- Chocolate, dark 30 g
- Pepper, black ground pinch
- Wraps 4 pcs
Instructions
- 1. Wash the spring onions and dry them thoroughly.
- 2. Cut the white and green parts of the spring onions into thin rings separately.
- 3. Peel the garlic and chop it finely.
- 4. Rinse the meat and pat it dry with a kitchen towel.
- 5. Heat the oil in a pot over high heat.
- 6. Sear the meat vigorously for about 7 minutes.
- 7. Season the meat with salt, cinnamon, and chili.
- 8. Add the white spring onion rings and the chopped garlic.
- 9. Sauté the vegetables for 1 to 2 minutes.
- 10. Deglaze the mixture with the tomatoes and 200 milliliters of broth.
- 11. Simmer the goulash covered for about 70 minutes.
- 12. Add more broth if necessary during cooking.
- 13. Check if the meat is tender and can be easily cut apart with a cooking spoon.
- 14. Let the goulash reduce uncovered for about 5 minutes.
- 15. Stir frequently until the sauce becomes thick.
- 16. Season the mole sauce with chocolate, salt, and pepper.
- 17. Heat the wraps in a pan over medium heat without fat.
- 18. Turn the wraps after about 1 minute until they are pliable.
- 19. Spread the goulash over the wraps.
- 20. Sprinkle the green spring onion rings over the goulash.
- 21. Roll the wraps tightly.
