🍽️ Homemade Worcestershire Sauce

Ingredients
- garlic cloves 1 pc.
- anchovy fillets in olive oil 20 g
- raisins 50 g
- cinnamon 0.5 tsp
- chili, ground 0.25 tsp
- allspice 0.5 tsp
- onions, dried 0.5 tsp
- ginger powder 0.5 tsp
- soy sauce 2 tbsp
- balsamic vinegar, dark 200 ml
- sugar beet syrup 100 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Peel the garlic cloves and chop them very finely.
- 2. Drain the anchovies and chop them finely as well.
- 3. Place the raisins in a bowl.
- 4. Cover the raisins with hot water.
- 5. Let the raisins soak for about 5 minutes.
- 6. Drain the water from the raisins.
- 7. Heat a pan over low heat.
- 8. Roast the spices in the pan for about 2 minutes.
- 9. Remove the pan from the heat as soon as the spices smell fragrant.
- 10. Place the soaked raisins into a tall container.
- 11. Add the roasted spices to the container.
- 12. Add the chopped anchovies to the container.
- 13. Pour the soy sauce into the container.
- 14. Add the vinegar to the container.
- 15. Add the beet syrup to the container.
- 16. Blend all ingredients finely until a smooth mixture forms.
- 17. Strain the sauce through a fine sieve into a pot.
- 18. Heat the sauce over low to medium heat.
- 19. Let the sauce simmer and reduce for about 15 minutes.
- 20. Season the sauce to taste with salt and pepper.
- 21. Pour the finished sauce into clean bottles.
- 22. Store the sauce in the refrigerator.
- 23. Use the sauce within about 1 month.
