  1. 1. Wash the leek thoroughly. Cut off the root end at the bottom and split the leek lengthwise into two halves. Hold the ends, fan out the layers like a flower, and rinse under running water to remove dirt. Slice the cleaned leek into thin rings.
  2. 2. Wash the savoy cabbage. Cut it into quarters and remove the hard core in the center. Slice the soft leaves into thin strips as well.
  3. 3. Peel the carrot. Cut it into thin lengthwise strips. Then cut these strips crosswise into small, narrow pieces.
  4. 4. Heat the margarine and one tablespoon of oil in a large pot over medium to high heat. Add the leek and savoy cabbage to the pot. Sauté the vegetables for about five minutes until they are soft. Season with salt and pepper.
  5. 5. Deglaze the vegetables with the broth. Reduce the heat to low and let the soup simmer for about twenty minutes.
  6. 6. Heat one tablespoon of oil in a separate pan over high heat. Fry the carrot pieces with a pinch of salt and sugar for about five minutes until they are slightly crispy.
  7. 7. Slice the cooked ham into thin strips. Add the ham strips to the carrots in the pan. Fry everything together for two more minutes.
  8. 8. Add the heavy cream to the soup in the pot. Puree the soup with a hand blender until it is smooth and creamy.
  9. 9. Add the fried carrots and ham to the soup. Let the mixture simmer for two more minutes over medium heat.
  10. 10. Wash the chives. Shake them dry and slice them into fine rings.
  11. 11. Grate the Parmesan finely. Set aside half of the chives.
  12. 12. Stir the Parmesan and half of the chives into the soup. Finally, season the soup to taste with salt, pepper, and a pinch of sugar.
  13. 13. Ladle the soup into deep bowls. Garnish with the remaining chives. Serve the soup hot. Enjoy your meal!
