Ingredients
- Dry yeast 4 g
- Sugar 1 tbsp
- Milk 80 ml
- Wheat flour, Type 550 180 g
- butter 50 g
- Eggs 1 pc.
- Sunflower oil 1 tsp
- Almonds, whole 50 g
- Hazelnut kernels, whole 50 g
- Dried plums 60 g
- Cranberries, dried 50 g
- Apricots, fresh 60 g
- Figs 60 g
- Cinnamon 0.5 tsp
- Vanilla sugar 1 tsp
- Organic lemons 1 pc.
- Honey 50 g
Instructions
- 1. Put the yeast, sugar, and milk into the mixing bowl.
- 2. Warm the mixture for 2 minutes at 37 degrees Celsius.
- 3. Add the flour, cubed butter, and one egg.
- 4. Knead the dough for 1 minute and 30 seconds.
- 5. Pour sunflower oil into a bowl.
- 6. Place the dough in the oil and roll it around to coat.
- 7. Let the dough rise, covered, for 40 minutes in a sheltered spot.
- 8. Clean and dry the mixing bowl.
- 9. Preheat the oven to 180 degrees Celsius.
- 10. Line a baking pan with baking paper.
- 11. Put almonds and nuts into the mixing bowl.
- 12. Chop the nuts for 5 seconds on the highest speed setting.
- 13. Add dried fruits, gingerbread spice, vanilla sugar, lemon juice, and lemon zest.
- 14. Chop the ingredients for 5 seconds on the highest speed setting.
- 15. Add honey and mix everything for 30 seconds on a low speed setting.
- 16. Add the yeast dough and mix everything for 50 seconds on a medium speed setting.
- 17. Press the dough evenly into the prepared baking pan.
- 18. Bake the bread in the oven for 40 minutes.
