🍽️ Hearty Burgers with Pear and Caramelized Onions

Ingredients
- ground beef 500 g
- ground pork 100 g
- salt pinch
- pepper, black ground pinch
- rosemary, fresh 8 g
- walnut kernels 25 g
- mayonnaise 100 g
- corn salad 50 g
- blue cheese 120 g
- onions, red 2 pcs.
- rapeseed oil 2 tbsp
- brown sugar 2 tsp
- balsamic vinegar, light 2 tbsp
- pears 1 pcs.
- hamburger buns 4 pcs.
Instructions
- 1. Season the minced meat in a bowl generously with salt and pepper.
- 2. Shape four equal patties with thumb thickness and 150 grams weight from the mixture.
- 3. Set the patties aside to reach room temperature.
- 4. Wash the rosemary thoroughly and dry it.
- 5. Pluck the rosemary needles and chop them finely.
- 6. Chop the nuts finely as well.
- 7. Mix the chopped needles and nuts in a bowl with mayonnaise.
- 8. Season the mayonnaise mixture to your taste.
- 9. Wash the lamb's lettuce thoroughly and spin it dry.
- 10. Cut the cheese into four equal slices.
- 11. Halve the onions and peel them.
- 12. Cut the onions into small cubes.
- 13. Heat the oil in a pan over medium heat.
- 14. Sauté the onion cubes until translucent for about three to four minutes.
- 15. Season the onions with salt and pepper.
- 16. Sprinkle the onions with sugar and caramelize them briefly.
- 17. Deglaze the pan with vinegar.
- 18. Simmer the onions for two to three minutes until the liquid has almost evaporated.
- 19. Wash the pear and peel it if desired.
- 20. Slice the pear crosswise into slices.
- 21. Remove the core from the pear slices.
- 22. Heat two tablespoons of oil in another pan on the highest setting.
- 23. Sear the patties on both sides for about two minutes.
- 24. Reduce the heat and finish cooking the patties with the lid closed for about six minutes.
- 25. Cook the pear slices in the pan for two to three minutes.
- 26. Top the cooked patties with the cheese slices and let them melt slightly.
- 27. Halve the burger buns and toast them briefly in the toaster.
- 28. Spread the nut mayonnaise on both bun halves.
- 29. Place the caramelized onions on the bottom halves of the buns.
- 30. Add the lamb's lettuce on top of the onions.
- 31. Place the burger patties on the lettuce.
- 32. Place the pear slices on the patties.
- 33. Cover the burgers with the top halves of the buns.
