  1. 1. Season the minced meat in a bowl generously with salt and pepper.
  2. 2. Shape four equal patties with thumb thickness and 150 grams weight from the mixture.
  3. 3. Set the patties aside to reach room temperature.
  4. 4. Wash the rosemary thoroughly and dry it.
  5. 5. Pluck the rosemary needles and chop them finely.
  6. 6. Chop the nuts finely as well.
  7. 7. Mix the chopped needles and nuts in a bowl with mayonnaise.
  8. 8. Season the mayonnaise mixture to your taste.
  9. 9. Wash the lamb's lettuce thoroughly and spin it dry.
  10. 10. Cut the cheese into four equal slices.
  11. 11. Halve the onions and peel them.
  12. 12. Cut the onions into small cubes.
  13. 13. Heat the oil in a pan over medium heat.
  14. 14. Sauté the onion cubes until translucent for about three to four minutes.
  15. 15. Season the onions with salt and pepper.
  16. 16. Sprinkle the onions with sugar and caramelize them briefly.
  17. 17. Deglaze the pan with vinegar.
  18. 18. Simmer the onions for two to three minutes until the liquid has almost evaporated.
  19. 19. Wash the pear and peel it if desired.
  20. 20. Slice the pear crosswise into slices.
  21. 21. Remove the core from the pear slices.
  22. 22. Heat two tablespoons of oil in another pan on the highest setting.
  23. 23. Sear the patties on both sides for about two minutes.
  24. 24. Reduce the heat and finish cooking the patties with the lid closed for about six minutes.
  25. 25. Cook the pear slices in the pan for two to three minutes.
  26. 26. Top the cooked patties with the cheese slices and let them melt slightly.
  27. 27. Halve the burger buns and toast them briefly in the toaster.
  28. 28. Spread the nut mayonnaise on both bun halves.
  29. 29. Place the caramelized onions on the bottom halves of the buns.
  30. 30. Add the lamb's lettuce on top of the onions.
  31. 31. Place the burger patties on the lettuce.
  32. 32. Place the pear slices on the patties.
  33. 33. Cover the burgers with the top halves of the buns.
