  2. 2. Grate about 4 tablespoons of orange peel coarsely.
  3. 3. Peel the remaining oranges with a sharp knife.
  4. 4. Remove the white pith under the peel as well.
  5. 5. Cut the peeled oranges into coarse pieces.
  6. 6. Catch the released juice in a bowl.
  7. 7. Halve the shallots and peel them.
  8. 8. Dice the shallots finely.
  9. 9. Peel the ginger.
  10. 10. Finely chop the ginger.
  11. 11. Heat oil in a pot over medium heat.
  12. 12. Add the shallots and ginger to the pot.
  13. 13. Sauté the vegetables for about 2 minutes until they become translucent.
  14. 14. Add the raw sugar to the pot.
  15. 15. Add a pinch of cinnamon.
  16. 16. Add a pinch of ground cloves.
  17. 17. Add a pinch of ground nutmeg.
  18. 18. Add the grated orange peel.
  19. 19. Heat the spice mixture for about 2 minutes.
  20. 20. Season the mixture with salt and pepper.
  21. 21. Add the orange pieces to the pot.
  22. 22. Add the collected orange juice.
  23. 23. Bring the mixture to a boil while stirring.
  24. 24. Reduce the heat to a low setting.
  25. 25. Let the chutney simmer uncovered for about 45 minutes.
