  1. 1. Thaw the game meat patties overnight in the refrigerator.
  2. 2. Halve the onions, peel them, and slice them into rings.
  3. 3. Clean the mushrooms with a kitchen towel and slice them.
  4. 4. Wash the thyme, shake it dry, and pick the leaves off the stems.
  5. 5. Heat a pan on the highest setting and add 2 tablespoons of oil.
  6. 6. Sauté the onion rings until they become translucent.
  7. 7. Add the mushroom slices and cook everything for about 3 minutes over medium heat.
  8. 8. Sprinkle the mixture with sugar and let it caramelize slightly.
  9. 9. Stir in the sour cherry jam and season with salt, pepper, and thyme.
  10. 10. Grill the patties on the hot grill for about 3 minutes on each side.
  11. 11. Place a slice of mountain cheese on each patty and let it melt for about 2 minutes.
  12. 12. Halve the burger buns and drizzle them with olive oil.
  13. 13. Place the buns cut-side down on the grill for about 1 minute.
  14. 14. Wash the lettuce leaves and shake them dry.
  15. 15. Spread some mustard on the bun halves.
  16. 16. Spread the onion-mushroom chutney on the bottom halves.
  17. 17. Place the patty on top and add a lettuce leaf.
  18. 18. Place the top bun on and serve the burgers.
