🥗 Wiener Sausages with Potato-Apple Salad

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- cucumbers 1 pc.
- onions, yellow 1 pc.
- apples, red 1 pc.
- parsley, fresh 20 g
- chives, fresh 10 g
- butter 1 tbsp
- yogurt, plain 150 g
- mayonnaise 3 tbsp
- vinegar 2 tbsp
- oil 1 tbsp
- pepper, black ground pinch
- sugar pinch
- vegetable broth 300 ml
- Vienna sausages 8 pc.
Instructions
- 1. Fill a pot with water and add some salt.
- 2. Bring the water to a boil.
- 3. Place the potatoes in the boiling water.
- 4. Reduce the heat to a medium level.
- 5. Cover the pot.
- 6. Cook the potatoes for about 25 minutes.
- 7. Take the cucumber.
- 8. Peel the cucumber.
- 9. Cut off the ends of the cucumber.
- 10. Slice the cucumber into thin slices.
- 11. Place the cucumber slices in a bowl.
- 12. Salt the cucumber slices.
- 13. Take the onion.
- 14. Halve the onion.
- 15. Peel the onion.
- 16. Dice the onion finely.
- 17. Take the apple.
- 18. Wash the apple.
- 19. Quarter the apple.
- 20. Remove the core.
- 21. Slice the apple.
- 22. Take the parsley.
- 23. Wash the parsley.
- 24. Pat the parsley dry.
- 25. Pluck the leaves from the stems.
- 26. Finely chop the parsley leaves.
- 27. Take the chives.
- 28. Wash the chives.
- 29. Pat the chives dry.
- 30. Cut the chives into rings.
- 31. Take a frying pan.
- 32. Melt the butter in the pan.
- 33. Use medium heat for this.
- 34. Add the onion to the pan.
- 35. Add the apple slices to the pan.
- 36. Fry the mixture for about 2 minutes.
- 37. Take a separate bowl.
- 38. Add the yogurt to the bowl.
- 39. Add the mayonnaise to the bowl.
- 40. Add the herbs to the bowl.
- 41. Add the vinegar to the bowl.
- 42. Add the oil to the bowl.
- 43. Mix the ingredients well.
- 44. Season the mixture with salt.
- 45. Season the mixture with pepper.
- 46. Season the mixture with sugar.
- 47. Take a pot.
- 48. Add the broth to the pot.
- 49. Heat the broth.
- 50. Take the cooked potatoes.
- 51. Drain the potatoes in a sieve.
- 52. Let the potatoes steam for a short moment.
- 53. Take the salted cucumbers.
- 54. Squeeze the cucumbers lightly.
- 55. Pour off the released water.
- 56. Peel the cooled potatoes.
- 57. Slice the potatoes.
- 58. Take a large bowl.
- 59. Place the potato slices in the bowl.
- 60. Add the cucumbers to the bowl.
- 61. Pour the warm broth over the potatoes and cucumbers.
- 62. Add the apple-onion mixture.
- 63. Mix everything well.
- 64. Set the bowl aside.
- 65. Let the salad marinate.
- 66. Take a pot.
- 67. Fill the pot with about 2 liters of water.
- 68. Heat the water.
- 69. Place the sausages in the hot water.
- 70. Warm the sausages for approx. 10 minutes.
- 71. Take the yogurt dressing.
- 72. Add the dressing to the potato-apple salad.
- 73. Mix the salad well.
- 74. Season the salad to taste.
- 75. Serve the salad with the warm Vienna sausages.
